Ingredients
- 4 large egg yolks
- 45 grams coconut flour
- 1/2 tsp xanthan gum
- salt dry seasonings of choice optional
Instructions
- in small bowl whisk together the dry ingredients until fully combined and no lumps
- Place a saucepan about halfway full of water over medium heat. Allow it to come to a full boil while making the pasta
- in a separate large mixing bowl. Beat the eggs together until fully combined and smooth
- Gradually add the dry ingredients into the eggs until fully combined and the dough is no longer sticky
- Line a clean worksurface and roll out very thin but not see througn. Cut into desired size pieces of pasta
- Check on water and make sure it is at a full boil. Place pasta into boiling water
- Cover and cook 2 to 4 minutes or until pasta can be pickedup wuth a fork. Drain pasta and serve with desired sauce.
- This can be made ahead and frozen. To cook frozen pasta: Place frozen pasta into boiling sauce and cook uncovered 2 to 3 minutes or until heated through
