Ingredients

Fruit And Yogurt

  • 1 cup Greek yogurt of choice
  • berries, or fruit of choice, cut into desired pieces
  • 1-2 TBS pumpkin seeds

Keto Cereal

  • 1/3 cup chopped nuts
  • 2 TBS pumpkin or flax seeds
  • 1 tsp brown Swerve
  • desired amount of milk of choice
  • 1 medium strawberry, cut into eighths
  • 2 TBS blueberries

French Toast In A Mug

  • 1 TBS butter
  • 1/4 cup milk of choice
  • 1 large egg
  • 1/4 tsp ground cinnamon
  • 1/4 tsp monkfruit sweetener
  • 1/4 tsp vanilla extract
  • 1/2 cup low carb bread cubes

Instructions

Fruit And Yogurt

  • Scoop desired amount of yogurt onto a plate or bowl. Top the yogurt with fruit and seeds or sprinkle the seed over the yogurt and use the yogurt/seed mixture as a fruit dip

Keto Cereal

  • Place chopped nuts in a bowl. Add brown Swerve and the seeds of choice. Stir to distribute the Swerve and top it with the milk of choice. Sprinkle Berries on top of milk.

French Toast In A Mug

  • Place the butter in a 12-16 oz microwave safe mug. Microwave on high 20-30 seconds or until the butter is completely melted. Use a fork and stir to make sure the butter is fully melted. Add milk, egg, ground cinnamon, monkfruit, and vanilla. Stir to fully combine everything. Make sure the egg is fully incorporated. Add the bread cubes and gently press the cubes into the bread mixture until each cube is fully coated. Microwave on high for 1-1/2 minutes or until set on top.
  • Remember all microwaves are different. Place your mug on a microwave safe paper plate when microwaving to avoid overflow

Ingredients

'Fried" Egg In A Mug

  • 1/8 tsp salt
  • 1-2 large eggs

Fruit And Breakfast Whipped Cream

  • 1 cup heavy whipping cream
  • 1 TBS monkfruit sweetener, optional
  • 1/2 tsp vanilla extract
  • sliced fruit or berries of choice
  • 1-2 TBS chopped pecans and almonds

Peanut Butter Roll Up

  • 8 inch low carb tortilla
  • 2-3 TBS no sugar added peanut butter
  • chopped fruit or berries of choice
  • 1-2 TBS flax seeds

Instructions

"Fried" Egg In A Mug

  • Spray an 8-12 oz microwave safe mug with cooking spray. Sprinkle salt in the bottom of the mug. This will attract the heat and help the egg cook evenly. Crack 1 egg into the mug. Pierce the egg all over at least 5 times so the egg will not explode. Add the other egg if desired and pierce it also at least 5 times all over. Cover the mug with a small microwavable plate. Microwave on high for 30 seconds. Check and make sure the egg is beginning to turn white around the edges. This is a sign it is "frying." Return the plate to the top of the mug and microwave another 20-30 seconds or until the yolk is done to your desired taste.
  • Remember every microwave is different. Microwave mug on a paper plate until you know the correct time according to your microwave to avoid overflow.

Fruit And Breakfast Whipped Cream

  • Breakfast Whipped Cream: Place the heavy whipping cream in a small bowl. Add the monkfruit sweetener (if using) and the vanilla extract. Use a hand mixer and beat on medium high for 3-5 minutes or until thick. Do not over beat. The cream should be fluffy but firm enough to stick to a spoon when it is turned upside down. Place the fruit of your choice into a small bowl or cup. Top the fruit with the desired amount of breakfast cream..Sprinkle nuts on top of cream. If you have leftover whipped cream store it in an airtight container for up to 3 days or scoop it out 1 TBS at a time onto a lined baking sheet and freeze for 2 hours or until firm. Once the scoops are firm transfer them to a freezer bag.

Peanut Butter Roll Up

  • Spread the desired amount of peanut better across the low carb tortilla. Top the peanut butter with the fruit of your choice. Sprinkle flax seeds over the top of the fruit. Roll the tortilla around the fruit and seeds and cut the roll into 6-8 small roll ups

  • 1 low carb bagel cut in half
  • desired amount of cream cheese
  • 1-2 TBS chopped nuts

No Oat "Oatmeal"

  • 1/4 cup ground flax seeds
  • 1/2 cup milk of choice
  • 1 TBS soft butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp brown Swerve
  • 1/4 tsp ground cinnamon
  • berries of choice
  • chopped nuts of choice

Omelet In A Mug

  • 2 large eggs
  • 1 TBS milk of choice
  • 1 TBS shredded cheese
  • 1 TBS chopped red bell pepper
  • 1/2 TBS chopped red onion
  • 1-2 TBS deli meat of choice or bacon, chopped

Instructions

Nutty Bagel

  • Place bagel halves in the toaster. Toast until desired texture. Spread desired amount of cream cheese over bagel halves. Top with chopped nuts

No Oat "Oat" Meal

  • Add flax seeds and milk to a 16 oz microwave safe mug. Add the milk of your choice. Stir until the seeds slightly just until the seeds are wet. Microwave on high 45-60 seconds or until mixture is thick. Add the soft butter and vanilla. Stir until the butter is fully melted. Sprinkle Swerve, cinnamon and seeds over the top of the thickened mixture. Stir to fully combine the flavors. Top with berries and chopped nuts.

Omelet In A Mug

  • Lightly spray a 16 oz mug with cooking spray. Add eggs and milk. Use a fork and stir to fully combine the eggs and milk. Add shredded cheese and bell pepper. Stir to coat the bell pepper. Add onion and stir to coat the onion. Add meat and stir to coat the meat. Sprinkle with seasoned salt and seasoned pepper to taste. Microwave on high for 30 seconds. Stir and microwave on high 30-45 seconds or until fully set.
