2 Minute Keto Vanilla Mug Cake

This recipe is designed to teach everyone how to make 2 minute keto vanilla mug cake

Ingredients

  • 14 grams coconut flour (2 TBS)
  • 5 grams baking powder (1 tsp)
  • 1/8 tsp salt
  • 1 large room temperature egg
  • 30 ml oil of choice (2 TBS)
  • 40 grams keto maple syrup (2 TBS)
  • 15 ml milk of choice (1 TBS)
  • 1/2 tsp vanilla extract

Instructions

  • Place the dry ingredients into a mug that is at least 12 oz or bigger. Whisk the dry ingredients together until there are no lumps. Add the wet ingredients. Whisk until fully combined and smooth. Microwave on high 1 1/2 minutes. Test the texture.
  • If a tester does not come out clean microwave on high 30 seconds more or until a tester comes out clean. Remove from the microwave and allow to sit for 2 minutes before serving. If desires top with whipped cream. frosting or toppings of choice.

This recipe is designed to teach everyone how to make quick keto white mug cake in 90 seconds

Ingredients

  • 2 TBS coconut flour
  • 2 TBS monkfruit sweetener or granulated sweetener of choice
  • 1/2 tsp baking powder
  • 1 large egg, room temperature
  • 2 TBS milk of choice
  • 1 TBS oil of choice
  • 1/2 tsp vanilla extract or extract of choice, optional

Instructions

  • Lightly grease a 12oz. microwave safe mug (mug must be at least 12 ounces the cake rises and falls back into cake form while it cooks)
  • In the mug place the dry ingredients. Use a fork and stir the dry ingredients until no lumps are in the dry ingredients
  • Add the egg, milk, oil and extract (if using) Use a fork and stir until fully combine and no dry ingredients are in the mug. Use a spatula and scrape down the sides of the mug and smooth top of the batter
  • Cook on high about 1 minute and 30 seconds or until the top of the cake is firm and a tester comes out clean. Microwave times will vary depending on the wattage of your microwave. My microwave is 1100 watts.
  • Allow to cool at least 5 minutes. Eat as is or top with the topping of choice

  • 1/4 tsp instant coffee or espresso
  • 1/2 tsp baking powder
  • 2 TBS monkfruit sweetener or granulated sweetener of choice
  • 1 large egg, room temperature

Instructions

  • In a 12oz microwave safe mug place the butter and the cream cheese (mug must be at least 12 ounces the cake rises and falls while cooking) Microwave on high about 20 seconds or until the butter and cream cheese are soft
  • Use a fork and stir the soft butter and cream cheese until combined. Add the remaining ingredients. Use a fork and stir until fully combined and smooth
  • Use a spatula and scrape down the sides of the mug. Microwave on high for 1 minute and 30 seconds or until the top of the cake is firm and a tester comes out clean. Microwave times will vary depending on the microwave wattage. My wattage is 1100 watts
  • Allow to cool at least 5 minutes. Eat as is or top with the topping of choice
