Ingredients

  • 1/2 cup coconut flour
  • 1/2 TBS baking powder
  • 1 1/2 TBS ground flax seeds
  • 2 TBS psyllium husk powder
  • 1/4 tsp salt
  • 1/2 TBS olive oil
  • 3/4 cup warm water, divided
  • 1 tsp xanthan gum

Instructions

  • Preheat oven to 400 degrees . Line a large baking sheet with parchment paper. Sift or whisk together the dry ingredients until there are no lumps in the dry ingredients
  • Add the oil and warm water. Stir to fully combine and create a smooth dough. Form dough into a ball. Massage a few seconds to make sure of the texture. Allow to sit uncovered at room temperature for 5 minutes to absorb excess moisture
  • Massage again to make sure the dough is still lightly moist and everything is sticking together
  • Sprinkle in the xanthan gum and add the remaining 1/4 cup water. Stir to fully combine. Massage the dough for about 1 minute. You should feel the beginning to have a little bit of stretch
  • Place dough onto a clean work surface. Roll into a 12 inch log. Make sure the log stays smooth with no cracks. If cracks appear, moisten fingers and rub the cracks out. If desired cut slashes about 1 inch apart on the top of the bread. Be careful not to cut all the way through
  • Bake in preheated oven at 400 degrees for 20 minutes or until golden and a tester comes out clean.
  • Remove from the oven. Allow to cool in the pan about 15 minutes or until the baguette is firm. Remove to a wire rack allow to cool completely before slicing

  • 1 tsp xanthan gum
  • 4 large eggs, room temperature
  • 1/2 cup oil of choice

Instructions

  • Preheat oven to 400 degrees. line a large baking sheet with parchment paper
  • In a large mixing bowl sift or whisk together the dry ingredients until there are no lumps
  • Add the eggs. Stir until fully combined. Add the oil. Stir until fully combined and a smooth dough has formed
  • Massage dough for 1 minute to absorb any excess moisture. Place dough onto a clean worksurface. Roll dough into a smooth 12 inch long log. If desired cut small slashes about 1 inch a part on the top of the bread. Be careful not to cut all the way through
  • Place into preheated oven. Bake at 400 degrees for 20-25 minutes or until golden and firm.
  • Remove from oven. allow to cool on pan for 15 minutes or until full enough to transfer to a wire rack. Allow to cool completely before slicing
