Simple Keto Coconut Flour Pancakes
This recipe is designed to teach everyone how to make easy simple keto coconut flour pancakes
Servings 6 medium pancakes
Ingredients
- 60 grams coconut flour (1/2 cup)
- 10 grams baking powder (2 tsp)
- 1/4 tsp salt
- 13 grams granulated monkfruit sweetener or granulated sweetener of choice (1 TBS)
- 4 large eggs, room temperature
- 27 grams oil of choice (2 TBS)
- 1 tsp vanilla extract
- 120 grams plain yogurt or sour cream, room temperature (1/2 cup)
- 4 oz milk of choice, room temperature (1/2 cup)
- berries or add ins of choice, optional
- keto syrup or topping of choice , optional
Instructions
- Preheat electric griddle or electric skillet to 350 degrees. Lightly spray griddle with cooking spray. If no electric griddle or skillet preheat a large stovetop skillet for about 5-7 minutes or until warm
- In a large mixing bowl sift or whisk together the coconut flour, baking powder, salt and sweetener until fully combined and no lumps are in the dry ingredients
- Add the eggs and whisk together until fully combined and all the dry ingredients are moist
- Add the oil, vanilla, sour cream and milk. Whisk together until fully combined and smooth batter is formed
- Pour the batter 1/2 cup at a time onto preheated griddle or skillet. Cook 3 minutes or until bubbles form on top and the pancake can be lifted easily from the griddle or skillet
- Turn the pancake over. Cook another 2-3 minutes or until the pancake can be easily lifted and is brown o both sides. Serve with favorite toppings

Servings 7 medium waffles
Ingredients
- 1 cup coconut flour
- 1/4 cup granulated monkfruit sweetener or granulated sweetener of choice
- 2 tsp baking powder
- 1/4 tsp salt
- 6 large eggs, room temperature
- 1 cup milk of choice
- 1/2 cup oil of choice
- 1 tsp vanilla extract
Instructions
- Preheat waffle iron according to manufacturer directions. lightly spray waffle iron with cooking spray
- In a large mixing bowl whisk or sift together the coconut flour, sweetener, baking powder, and salt until fully combined and no lumps are in the dry ingredients
- Add the eggs. Whisk until fully combined and all the dry ingredients are moist
- Add the milk, oil and vanilla. Whisk until fully combined and smooth dough/batter has formed. This will be thick but should spread easily
- Scoop dough/batter out about 1/2 cup at a time and place in the center of each waffle compartment. Use the back of a spoon or heat safe spatula and spread the dough/batter evenly across each waffle compartment
- Close the lid of the waffle iron and cook according to manufacturer directions. Use a heat safe spatula and to remove the waffles once they are done cooking. Serve with desired toppings
