Gluten Free Keto Cinnamon Coffee Cake Muffins

This recipe is designed to teach everyone how to make easy gluten free keto friendly cinnamon muffins

Ingredients

  • 1 1/2 cups almond flour
  • 2 TBS psyllium husk powder
  • 2 tsp baking powder
  • 1 1/4 tsp ground cinnamon
  • 5 TBS VERY soft butter
  • 1/2 cup powdered Swerve or powdered sweetener of choice
  • 1 1/2 tsp vanilla extract
  • 1/2 cup sour cream, room temperature
  • 2 large eggs, room temperature

Cinnamon Topping

  • 2 TBS butter, melted
  • 1 tsp ground cinnamon
  • 1/4 cup monkfruit sweetener or granulated sweetener of choice

Instructions

  • Preheat oven to 350 degrees. Line or spray a 12 cup muffin tin
  • In a large mixing bowl whisk together almond flour, psyllium husk powder, baking powder, and ground cinnamon until fully combined and no lumps are in the flour. Set aside
  • In a large mixer bowl combine butter, powdered Swerve, and vanilla extract. Beat on low 20 seconds or until creamy
  • Scrape down sides of bowl if needed. Add eggs and sour cream and beat on low 20 more seconds or until fully combined
  • Scrape down sides of the bowl again if needed. Slowly add dry ingredients to wet ingredients and beat on low for 30 seconds or until fully combined
  • Spoon batter equally between prepared muffin tin cups, about 2 TBS of batter in each muffin cup. Use a butter knife or small spatula and gently smooth the tops of the better to fill the bottom of the muffin cups.
  • Bake 20-22 minutes or until a tester comes out clean
  • After done baking let muffins sit in the muffin tin for at least 10 minutes to finish cooking and all the ingredients are set. Transfer to a wire rack to cool completely

Cinnamon Topping

  • Melt butter in a small mug until it is liquid. Set aside. In a small bowl whisk together cinnamon and monkfruit sweetener until fully combined.
  • Unwrap one muffin. Generously brush top of the muffin with melted butter. Dip the top of the muffin into the cinnamon mixture and generously coat the muffin top with cinnamon mixture. Place on serving platter and repeat until all the muffin tops are coated with the cinnamon topping

Notes

This recipe yields 12 muffins. 1 serving equals 1 muffin 
1 muffin contains about 1.5 grams of net carbs

    • Most gluten free batter will taste odd because of the natural sweeteners but once baked they taste great. Salt can be added if you’d like for more flavor
