How To Make Breadless Keto Breakfast Sandwiches

Quick Breadless Egg “Bread”

This recipe is designed to teach everyone how to make quick egg "bread" without using bread

Ingredients

  • 4 large eggs or how ever many needed to make sandwiches
  • 2-4 TBS water for 12 inch skillet or smaller 2 TBS. for large or electric skillet 4 TBS
  • salt and pepper to taste
  • dry cilantro, optional
  • desired amount of shredded cheese

Instructions

  1. Place 4 wide mouth mason jars upside down into an electric skillet or large stove top skillet. If you do not have mason jar lids use a circular, heat safe object with about a 3 inch diameter

  2. Spray lids and skillet with cooking spray

  3. Crack 1 egg into each lid. Use a fork and gently break the yolk

  4. Pour 2-4 TBS water (depending on skillet size) into skillet AROUND the mason lids. Do not pour water into eggs.

  5. Turn heat onto medium. If using an electric skillet turn heat onto 325 degrees. Let skillet heat for about 1-2 minutes or just until warm

  6. Cover the skillet and let cook for 3 minutes or until the eggs are cooked

  7. Uncover, lightly sprinkle with desired amount of salt, pepper and dry cilantro (if using) Lightly sprinkle 2 of the eggs with the desired amount of shredded cheese

  8. Cover and cook 1 minute more or until the cheese is melted

  9. Use a spatula or tongs and remove the lid with the egg that does not have cheese. Turn the egg onto a serving plate. If it does not slide right out give the egg a nudge with fingers

  10. Remove the other lid with the egg that has cheese on it. Turn the egg onto the plate nest to the egg without cheese. Turn the egg with the cheese, Cheese side up.

  11. Top cheesy egg with desired toppings. (I usually top mine with mashed avocado and a sausage patty, bacon or ham

  12. Place the egg without the cheese on top of the toppings to create a sandwich. Repeat until you have the desired amount of sandwiches. Serve warm

Recipe Notes

This recipe yields 2 pieces of ‘bread” . 1 serving equals 2 pieces of egg “bread”

1 serving contains about 2 grams of net carbs 

Easy Gluten Free Keto Sausage Patties

This recipe is designed to teach everyone how to make easy keto sausage patties

Prep Time 5 minutes
Cook Time 15 minutes
Servings 6 patties

Ingredients

  • 1 lb ground sausage meat
  • 1 TBS pure maple syrup (optional) not enough to effect carbs
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dry sage
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 350 degrees. Line and lightly spray a large baking sheet

  2. In a large bowl combine all ingredients. Mix thoroughly to combine all the seasonings. (the best way to do this is to use your hands and massage the seasoning into the meat

  3. Divide the mixture into 6 equal portions (i use an ice cream scoop to scoop it out. Each portions equals about 1 1/2 ice cream scoops full)

  4. Roll each scoop into tight balls. Flatten tops of balls to form patties about 3 inches in diameter

  5. Bake 10 minutes or until patties are brown. Turn patties over and bake 4-6 minutes more or until no pink and internal temperature is at least 165 degrees. Drain patties. Serve warm
