How To Make Gluten Free Keto Sub Sandwich Bread

Sandwiches are a food we all love. From lunch to dinner to snacks sandwiches are amazing. Sandwich bread that is low carb, gluten free and keto friendly can be really hard to find and when you do find it the bread is usually flat and dense.

This recipe is amazing! It’s easy, quick, and nice and fluffy just like traditional sub sandwich bread.

Secret To Fluffy Bread Without Yeast

My favorite thing about this recipe is that it does not require yeast which makes this recipe extremely quick.

Now you may ask how can bread be fluffy without yeast. The answer tot that is baking powder and cider vinegar.

Remember the old vinegar and baking soda volcano? That foamy bubbly reaction is caused by the combination of the acid in the vinegar and the gases in the baking soda. When they come in contact with the oxygen in the air they create an expanding explosion so to speak. As a result when you combine vinegar and baking powder in your baked good that expanding explosion is happening in your baked good which results in a light fluffy baked good

Always Use Double Acting Baking Powder

When using baking powder and vinegar as a rising agent always use double acting baking powder.

Double acting baking powder expands twice. Once while it is being mixed into the other ingredients and again as it is being baked. As a result your baked good while rise faster an higher than baking soda or single acting baking powder.

How To Keep The “Sub” Shape

When making sub sandwich bread without yeast the dough is going to need some help to keep it’s shape. Without yeast the dough will be slightly thinner and limp. Therefore to help keep the shape a holder must be used.

If you have a hot dog bun mold these work perfect however if you do not have one you can easily make one using foil.

How To Make Foil Holders

To make the holders all that’s needed is 5-7 strip of foil measuring 12 x 4 inches. Fold each strip in half making them 6 x 4 inches. Folding the strips in have is very important. The double layer is needed for stability. The foil also helps so the rolls do not brown as fast.

Next, roll each foil strip one at a time around a rolling pin to create a “cradle” to put the dough in.

Why Sour Cream

This recipe calls for sour cream which may seem a little strange. The sour cream gives moisture and texture to the dough for this reason it can not be substituted with milk of any kind.

Psyllium Husk Powder

Psyllium husk powder is another ingredient that is vital to the texture of this recipe.

The psyllium husk powder is the binding agent that “glues” the ingredients together. Without the psyllium husk powder there is no binding agent and as a result the ingredients will fall apart after they are baked.

Also make sure psyllium powder is used and not the whole psyllium husk. The fine texture of psyllium husk powder is needed for that smooth fluffy texture in the roll.

Ingredients

For “Gluten Free Keto Sub Sandwich Bread” all that’s needed is almond flour, coconut flour, psyllium husk powder, ground flax seeds, baking powder salt, sour cream, eggs, oil, seasoned salt and seasoned pepper.

Make Gluten Free Keto Sub Sandwich Bread

To Make this bread just whisk together all the dry ingredients. Add the wet ingredients. Beat the ingredients all together. Place the dough into the holders. Bake the rolls and serve them however you choose.

Using The Foil Holders

Lightly spray each foil holder with cooking spray to prevent the dough from sticking. Scoop about 4-5 tablespoons of the dough into the center of each holder. Make sure the holders are mostly full and have space at the top and the bottom so the rolls can expand. Place the holders onto a large baking sheet and bake.

Ingredients

  • 2 1/8 cups almond flour or pumpkin seed flour
  • 2 tsp coconut flour
  • 1/4 cup psyllium husk powder
  • 1/8 cup ground flax seeds
  • 1 TBS baking powder
  • 1 tsp seasoned salt
  • 1 cup sour cream
  • 4 large eggs, room temperature
  • 1/4 cup oil
  • 1 tsp cider vinegar

Instructions

  • Preheat oven to 350 degrees. Place foil holders onto a large baking sheet.(see notes on how to make foil holders)
  • Lightly spray each holder with cooking spray and use a paper towel to spread the spray over the inside of the holder. Set aside
  • In a larger mixer bowl combine almond flour, coconut flour, psyllium husk powder, ground flax seeds, baking powder and seasoned salt.
  • Whisk these together until the dry ingredients are fully combined
  • Add 1 cup of sour cream and beat on low for 25 seconds or until all the dry ingredients are wet.
  • Add eggs and beat on low 25 more seconds or until fully combined
  • Add oil and vinegar. Beat on low 30 seconds or until fully combined. Let the dough rest for 10 minutes so the psyllium husk powder can absorb the moisture
  • After the dough has rested it will still be wet but you should be able to scoop it.
  • Use a cookie scoop or tablespoon and scoop 4-5 scoops of the batter into the center of each foil holder. Leave room at the top and the bottom for the dough to expand.
  • Use a butter knife and gently shape the scoops into a log. Place in the oven and bake 20-25 minutes or until golden.
  • After the rolls have baked let them sit in the holders for 5 minutes so the ingredients can fully set together. Then transfer to a wire rack.

Notes

This recipe yields about 5-6 buns.
1 serving equals 1 sub bun. 1 serving contains about 4 grams of net carbs.

Meatballs

  • 1 1/2 pounds ground beef or turkey
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dry oregano
  • 1/4 tsp dry basil
  • seasoned salt to taste
  • seasoned pepper to taste
  • 1/2 cup low carb bread crumbs or almond meal

Sauce

  • 2: 15 oz cans tomato sauce
  • 12 oz can tomato paste
  • 15 oz can diced tomatoes, undrained
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dry oregano
  • 1/2 tsp dry basil
  • 1/4 tsp dry thyme
  • seasoned salt to taste
  • seasoned pepper to taste

Instructions

  • Preheat oven to 350 degrees. Line a large baking sheet with foil. Lightly spray the foil with cooking spray
  • In a large mixing bowl break up the beef or turkey into small chunks. Add the egg and stir to fully combine.
  • Add milk and stir again to fully combine
  • Add onion powder, garlic powder, oregano, basil, seasoned salt and seasoned pepper. Stir until the seasonings are fully combined.
  • Add breadcrumbs or almond meal and stir to thoroughly distribute the breadcrumbs
  • Use a cookie scoop or 1 TBS and scoop the meat mixture onto the prepared cookie sheet. Use your fingers and press each scoop into a tight ball.
  • Bake 18-20 minutes or until no longer pink. Let stand on baking sheet 3-5 minutes after baking.

Sauce

  • While the meatballs are baking. Preheat a 12 inch skillet over medium heat for 5 minutes. Add the tomato sauce and tomato paste
  • Stir the paste and sauce together until they are fully combined and smooth.
  • Add diced tomatoes, onion powder, garlic powder, basil, thyme seasoned salt and seasoned pepper
  • Stir to fully combine seasonings. Bring to a low boil and reduce the heat to low. Cover and let simmer for 5 minutes.
  • Add cooked meatballs and increase heat to medium. Bring to a low boil. Cover, reduce heat to low and simmer for another 5 minutes to fully incorporate seasonings.

Assemble The Sandwich

  • Slice the sub rolls in half long ways. Scoop the desired amount of meatballs and sauce over the bottom part of the sub roll. Top with shredded mozzarella cheese and cover with the top half of the sub roll. Serve hot.

  • The only Psyllium Husk Powder I can readily find is at a local co-op and it’s labeled Premium Dietary Fiber Supplement . It’s in a large 12 oz bottle. Doesn’t necessarily say on the front label for baking, but it is a powder. Is this how it’s typically sold?? Thanks! Hopefully, you can get right back to me!! Sylvia

    • I buy mine in bulk in the whole foods section in my local grocery store but yes it is many times labeled as a dietary fiber.

    The subs never turned out like picture. Adding up the calories and such make this a very high caloried sun bun.

  • Can i freeze these rolls? Baked or unbaked bette to freeze? And i havent got double acting baking powder..is there a substitute?

    • Yes, you can freeze these rolls. It is best to freeze them after they are baked and cooled, gluten free dough tend to dry out if it is not baked. If you do not have double acting baking powder, you can use baking soda just reduce the amount by 1 tsp
