How To Make Quick Keto Meatloaf

Gluten Free Keto Meatloaf

This recipe is designed to teach everyone how to make quick and easy keto friendly meatloaf

Ingredients

  • 1 lb ground beef or ground meat of choice
  • 1/4 cup keto ketchup (see recipe)
  • 1 large egg
  • 1/4 cup dry low carb bread crumbs or almond meal
  • 1/2 tsp dry oregano
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper

2 Minute Keto Ketchup

  • 6 oz tomato paste
  • 2 TBS apple cider vinegar
  • 1/8 tsp pepper
  • 1 TBS monkfruit sweetener or sweetener of choice
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 TBS water (more or less depending on how thick you want your ketchup)

Instructions

  • Preheat oven to 350 degrees. In a large bowl combine ground beef, keto ketchup, and egg. Stir to fully combine
  • Add dry oregano, onion powder, garlic powder, salt, pepper and dry low carb bread crumbs. Stir to fully distribute seasonings and bread crumbs.
  • Spoon mixture into an 8 x 4 inch loaf pan. Use a spatula or spoon and spread meat mixture evenly throughout the pan.
  • Use fingers or the back of a large spoon and firmly press the meat mixture into the pan.
  • Bake at 350 for 30 minutes, Spoon 3 more tablespoons of the keto ketchup over the top of the meatloaf. Bake for 10-15 minutes more or until the internal temperature reaches 160 degrees. Let stand for 5 minutes before serving
  • Recipe can be doubled and baked in a 9 x 5 inch loaf pan.

Keto Ketchup

  • In a small bowl whisk together tomato paste and apple cider vinegar until smooth
  • Add pepper, monkfruit, salt, garlic powder, onion powder and water. Stir until smooth
  • Stir in water 1/2 TBS at a time until ketchup is your desired consistency.
  • Spoon into a mason jar or airtight container. Store in refrigerator up to 1 week.

Notes

This recipe yields about 4 servings 1 serving equals 1/4 of the loaf
1 serving contains about 3 grams of net carbs
