HOW TO MAKE SUGAR FREE KETO CONDENSED MILK

Have you ever found a recipe that looked amazing but when you read the ingredients you found that it called for sweetened condensed milk? Of course, being a diabetic or on a low carb, keto diet you might think you’ll have to throw the recipe away or make it and suffer the consequences, but I have good news for you. You can make the recipe, enjoy it and you don’t have to feel guilty about it one single bit. Just use either one of these keto sweetened condensed milk recipes instead of the sugar, carb filled cans of sweetened condensed milk.

What Is Needed For Sugar Free Sweetened Condensed Milk

The first recipe for sugar free keto condensed milk is so easy and tasty. It only requires 3 ingredients and 20 minutes of your time.

The ingredients you need are:

  • heavy whipping cream
  • butter
  • powdered Swerve
  • vanilla extract

The vanilla is optional but it helps to bring out the flavor. First, mix everything together in a 12 inch skillet or a wide 5qt stockpot, THE SIZE OF PAN IS VERY IMPORTANT FOR IT TO COOK PROPERLY. The smaller the pan the longer the “milk” takes to condense. Bring it to a boil over medium heat. Make sure you stir it frequently to make sure it doesn’t scorch. Also watch it carefully because it can boil over quickly.

After it is boiling turn the heat down to the medium low and boil for 15-20 minutes. Again, watch it carefully and stir it frequently to avoid burning and over flow.

Once it has boiled the milk should have reduced by about 50 percent and be slightly thick. Now, remove it from the heat and let it cool for at least 30 minutes before you use it or store it. It will continue to thicken slightly as it cools. The end result should be smooth, thick and delicious

Now it’s ready to be used. You keep this in the refrigerator for up to 7 days. Just let it cool completely, place it in an airtight container, and store it in the refrigerator. If you store it in the refrigerator for more than a day the mixture will most likely solidify because of the butter, but that is not a problem. If this happens just run the jar or container with the lid on under hot water just to take the chill off. Next, remove the lid and microwave it on high for about 10 seconds or until it becomes liquid. Stir it with a fork to make sure it is fully combined and smooth.

The second recipe for keto sweetened condensed milk is quickly becomig my favorite. It only requires 2 ingredients and it does not solidify after being refrigerated.

To make the second recipe stir together 2 cups of almond milk or milk of your choice and 2/3 cup of monkfruit sweetener in a 3 quart sauce pan over medium heat until it comes to a bubbly simmer. Once it comes to a simmer let it GENTLY simmer for 30-40 minutes over medium low heat until the milk has reduced by 50 percent, has darkened to a light beige color and has slightly thickened.

Things to keep in mind

Do not walk away from the pan

You do not want to stir this at all once it has come to a simmer but you also do not want to walk away from the pan. Keep a close eye on the milk to avoid it over flowing or scorching

Not all sweeteners will work

When choosing a sweetener for this recipe not all sweeteners will work. You need a sweetener that will cook the same as sugar. Mainly it needs to be able to carmalize. Sweeteners like xylitol, stevia or Splenda will not work in this recipe.

How Do I Use Sugar Free Condensed Milk

Using sugar free condensed milk is simple. All you have to do is substitute it in equal amounts in any recipe that calls for regular condensed milk. Store leftovers in the refrigerator. My favorite way to use it is in my homemade sugar free ice cream or as a sweetener in my coffee.

How Many Carbs Does Sugar Free Keto Condensed Milk Have

This first recipe using cream has roughly about 14 grams of net carbs for THE WHOLE RECIPE. The average recipe calls for a 14 oz can (1 1/4 c). A 1 1/4c serving of this recipe contains about 10 grams of net carbs. That’s a HUGE difference considering that just one 14oz can of regular sweetened condensed milk has over 290 grams of carbs!

The second recipe using almond milk contains about 6 grams of net carbs for the entire recipe. For a 1 1/4c (14oz) serving size the carb count is about 9 grams of net carbs.

How To Make Sugar Free Keto Sweetened Condensed Milk

This is a diabetic and keto friendly version of sweetened condensed milk

Ingredients

  • 2 1/4 cups heavy whipping cream
  • 1/2 cup powdered Swerve
  • 1/4 cup butter
  • 1/4 tsp vanilla extract (optional)

Instructions

  • Mix together all ingredients in a 12 inch skillet or wide 5 quart stock pot. Gently whisk the ingredients until the butter completely melts. (i like to cut the butter into cubes to help it melt faster)
  • Bring to a boil over medium heat. Stir frequently.WATCH CAREFULLY to avoid scorching or overflow
  • Reduce heat to medium low
  • Simmer for 15- 20 minutes or until milk has reduced by 50 percent and is thickened. Make sure to stir frequently
  • Remove from heat.Stir in 1/4 tsp vanilla if you want a little more flavor to the milk. Let cool in the pan until room temperature . The milk will thicken more as it cools.
  • Pour cooled milk into a mason jar or an airtight container. Let cool completely before using or storing. Store in the refrigerator for up to 1 week.
  • If milk becomes solid and does not combine after being refrigerated rinse the jar with the lid on under hot water just to get the chill off. Remove the lid and microwave on high about 10 seconds or until the milk had become liquid and is smooth and thick. Stir with a fork to make sure the milk is completely smooth

Notes

This can be made up to 1 week in advanced, Make sure to let it cool completely before storing it in an airtight container. Store leftovers in the refrigerator and shake it up every day to avoid the milk and sweetener from separating

Ingredients

  • 2 cups almond milk or milk of choice
  • 2/3 cup monkfruit sweetener or sweetener of choice the sweetener needs to be able to cook up the same as sugar. Stevia, xylitol and other sweeteners may not work

Instructions

  • In a 3 quart saucepan combine milk and monkfruit. Stir gently over medium low heat just to combine. Heat over medium low until all the monkfruit is fully dissolved.
  • Once the monkfruit has fully dissolved bring the milk to a bubbly simmer over medium low heat. WATCH CAREFULLY to avoid scorching or overflow.
  • Let simmer gently WITHOUT STIRRING for 30-40 minutes or until the milk has reduced by half, darkened to a light beige color and has slightly thickened.
  • Remove from the heat and let cool in the pan for about 30 minutes or until it comes to room temperature. Will thicken more as it cools
  • Once it has come to room temperature pour milk into a mason jar or an airtight container and cool completely before sealing.
  • After the milk has cooled completely seal with a lid and store in the refrigerator for up to 6 months. The milk will continue to thicken after it is refrigerated.

Notes

If using this for my keto ice cream recipes you will need to make 2 batches and refrigerate them overnight. Stir them gently before putting them into the recipe to make sure none of the ingredients have separated
