Quick Keto Hot Chocolate Mix

Ingredients

  • 1 cup powdered coconut milk or powdered milk of choice
  • 1/2 cup granulated Swerve or granulated sweetener of choice
  • 1/4 cup cocoa powder
  • 1/8 tsp salt

Instructions

  • Whisk all ingredients in a medium bowl until fully combined. Pour into a mason jar or an airtight container
  • When ready to use: heat 1cup of water or milk to desired temperature. Use a fork and stir in desired amount of chocolate mix until the mix is completely dissolved. I use 2-3 TBS of the mix

Ingredients

  • 2 TBS powdered gelatin, unflavored
  • 1 cup water, divided
  • 2 cups granulated Swerve or granulated sweetener of choice
  • 1/2 cup powdered Swerve or powdered sweetener of choice, divided
  • 1/4 tsp salt
  • 2 tsp vanilla extract

Instructions

  • In a small bowl stir together the gelatin powder an 1/2 cup of the water until the powder is fully combined. Let it sit for 10 minutes to "bloom" or get firm.
  • While it's getting firm. Place the remaining 1/2 cup of water in a 5 quart saucepan or stockpot. Add the granulated Swerve. Stir over medium heat until the Swerve is fully dissolved and the mixture comes to a low boil.
  • Add the firm gelatin mixture. Stir until the gelatin in fully dissolved.. Attach a candy thermometer to the pan. If you don't have a thermometer it's ok you can still make this
  • Bring the mixture up to a fully rapid boil without stirring. This should take around 10-15 minutes or until the temperature is 240 degrees
  • While the mixture is boiling line an 8×8 inch cake pan with parchment paper. Allow the paper to hang over the sides to use as "handles" Dust the parchment paper with 1/4 cup of the powdered Swerve. Set aside
  • Once the water mixture has come up to 240 degrees use oven mitts and carefully pour the mixture into a large mixture bowl
  • Attach the whisk attachment to the mixture. Add the salt and the vanilla
  • Whisk on low 2 minutes to make sure everything is fully dissolved. Increase the speed to high. Whisk on high for 10-15 minutes or until the marshmallow is smooth, fluffy and has doubled in size
  • Lightly grease a spatula and loosen the marshmallow from the sides of the bowl. Scoop the marshmallow into the prepared pan. Use a greased spatula or greased hands and stretch the marshmallow evenly across the bottom of the pan. Allow to sit in the pan uncovered at room temperature for about 3 hours or until firm
  • Dust the top of the firm marshmallow with the remaining 1/4 cup of powdered Swerve
  • Grasp the parchment paper "handles" Carefully transfer the marshmallow slap to a cutting surface. Use a large sharp knife or cookie cutters and cut the marshmallow into the desired shape and size. If the marshmallow sticks to the knife lightly grease the knife or dust it with powdered Swerve
  • Roll the individual marshmallows in to extra powdered Swerve to make sure the marshmallow is no longer sticky. Shake off any excess powdered Swerve. Use in any recipe that requires marshmallows or store in an airtight container at room temperature for up to 6 weeks

    I had an epic Pinterest fail! While boiling the mixture, it was not frothy, just clear with bubbles, even after 10 minutes. I rewatched the video to see if maybe the cooking temp was increased, but there was no mention. Of course I was impatient and turned up the heat. Unfortunately, I must have burnt the mixture! Not wanting to lose out on the money I spent on expensive ingredients, I continued and at the end of 10 minutes in my Kitchen Aid, ended up with something that resembled brown sugar, but was completely stuck to my bowl. Luckily it all dissolves in water. Maybe you can add a note in there regarding the importance of NOT turning up the heat. Thank you. I’m trying a no cook recipe now.

    • Yes definitely. Unfortunately making homemade marshmallows is not a quick task. It takes time to go low and slow. It also can be a little tricky especially without a thermometer. It took me some trial and error before I got my recipe just right. Don’t give up and good luck 🙂
