Simple Keto Mini Doughnut Twists

Ingredients

  • 120 grams  coconut flour (1 cup)
  • 15 grams baking powder (1 TBS)
  • 1/4 tsp salt
  • 19 grams  brown sugar sweetener of choice (1 1/2 TBS), adjust to taste
  • 75 grams  granulated sweetener of choice (1/3 cup)
  • 2 grams xanthan gum (1/2 tsp)
  • dry spices of choice, optional
  • 3 large  eggs, room temperature
  • 1/2 cup  butter, melted and cooled
  • 123 grams plain yogurt or sour cream, room temperature
  • 9 grams  vanilla extract (2 tsp)

Glaze

  • 75 grams powdered sweetener of choice more or less depending on desired consistency
  • 46 ml room temperature milk of choice (3 TBS) more or less depending on desired consistency

Instructions

  • Sift dry ingredients into a large mixing bowl until there are no lumps.
  • Stir in the eggs until the dry ingredients are moist. Stir in the milk, yogurt, and vanilla extract until fully combined and a smooth dough has formed
  • Form dough into a ball and massage 1 minute. Return to mixing bowl and allow to sit at room temperature about 5 minutes to absorb extra moisture
  • Preheat air fryer or oven to 350 degrees. If baking in oven line a large baking sheet with parchment paper
  • Line a clean worksurface with parchment paper.
  • Scoop dough out 1/4 cup at a time onto prepared worksurface. Shape dough into desired size and shape. (See video if needed) Make sure dough stays smooth at all times
  • Lightly spray the doughnuts with cooking oil. Place into air fryer and air fry about 5 minutes until golden.If baking place on baking heet and bake at 350 degrees for 17 to 20 minutes until golden
  • Open air fryer drawer and allow doughnuts to sit in drawer 3 minutes to firm up. If baking after done baking allow to sit on the pan 10 minutes to firm up

Glaze 

  • Alternate spooning and stirring milk and powdered sweetener into wide bowl until smooth and desired consistency. I ended up using 100 grams of powdered sweetener. Place a piece of parchment paper under a wire rack
  • Place doughnuts one at a time into the glaze and use a spoon to coat the doughnut with the glaze
  • Place glazed doughnuts onto prepared wire rack and allow to sit 15 minutes for glaze to firm up. Eat immediately or store leftovers in an airtight container at room temperature up to 3 days
