LOW CARB NO PASTA RAVIOLI

Italian food is probably one of the favorites when talking about cuisine types. And pasta of course is one of the first foods that comes to mind when Italian food is thought of. I absolutely love Italian food. But Italian food is not usually low carb friendly. However, this doesn’t mean we have to give up Italian pasta dishes forever.

No pasta ravioli is quickly becoming a favorite in my household because no pasta ravioli actually satisfies our craving for Italian pasta without extra carbs. My nine year old son actually likes no pasta ravioli. Which means this recipe must be pretty good!

How Long Does No Pasta Ravioli Take To Make

I think one of the ideas I like most about no pasta ravioli is no pasta ravioli is quick and easy. No pasta ravioli takes about ten minutes to prepare and another thirty minutes to cook. Which means dinner is ready in about forty minutes.

What Is Needed To Make No Pasta Ravioli

Another plus about no pasta ravioli is no pasta ravioli only requires a few ingredients, pasta sauce, filling and zucchini for the “noodles.”

The sauce for no pasta ravioli I actually make from scratch and it takes less than five minutes. The sauce is nothing complicated, just tomato sauce, tomato paste and some seasonings. Store bought pasta sauce can be used in place of the homemade sauce if preferred. But as I said the sauce I make is so quick and easy there really is no point in buying store bought sauce.

How Many Carbs Are In No Pasta Ravioli

The amount of carbs always depends on the serving size. If the recipe is followed exactly the way the recipe is written it serves about six. Each serving size is about 15 grams net carbs

A serving size is about four to five “ravioli” squares. Four to five ravioli may not sound like much but trust me no pasta ravioli is very filling.

Low Carb No Pasta Ravioli

This recipe is designed to teach everyone how to make easy low carb ravioli without pasta

Ingredients

  • 15 oz tomato sauce
  • 6 oz tomato paste
  • 1/2 tsp garlic powder
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/2 tsp onion powder
  • seasoned salt, to desired taste
  • seasoned pepper, to desired taste

Ravioli and Filling Ingredients

  • 2-3 medium zuchinni
  • 2 cups cottage cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/2 tsp dry basil
  • 1/4 tsp seasoned salt
  • 1/2 tsp garlic powder
  • 1/8 tsp seasoned pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 lb cooked ground meat or meat substitute

Instructions

  • Preheat the oven to 350 degrees and spray a 3 qt casserole dish with cooking spray

The Sauce

  • For the sauce, in a small bowl whisk together tomato sauce, tomato paste, garlic powder, basil, oregano, onion powder, seasoned salt and seasoned pepper until sauce is smooth. Set the bowl aside

The Filling

  • For the filling, in another small bowl stir together cottage cheese, Parmesan cheese, egg, basil, seasoned salt, seasoned pepper, and garlic powder. Set bowl aside

Assemble Ravioli

  • Cut the ends off or the zucchini and use a vegetable peeler to peel long thin slices (see the video for an example if needed) Do this until all the zucchini are thinly sliced
  • Place 2 zucchini strips horizontally into the prepared casserole dish. Slightly over lap the strips.
  • Place 2 more zucchini strips vertically across the horizontal strips to form a zucchini cross
  • In the center of the zucchini cross place 1 TBS or desired amount of filling. Top the filling with 1/2 TBS or desired amount of ground meat
  • Fold the ends of the zucchini around the filling and place the ravioli square seam side down in the casserole dish. Repeat until all zucchini are filled and casserole dis is full or almost full. Do not stack the zucchini (see video for example if needed)
  • Spoon the sauce around and over the zucchini
  • Top the sauce with the desired amount of mozzarella cheese. Sprinkle with extra meat if desired
  • Bake for 30 minutes or until the cheese is melted and the zucchini is fully heated.

Notes

This recipe serves 4-6 people. Each serving equals about 4-5 ravioli squares. Each serving has about 15 grams of net carbs.
