Why is Oven Fried Chicken Better

Ingredients

  • 1 cup low carb bread crumbs or almond meal
  • 1/4 cup melted butter
  • 1/2 tsp paprika
  • 1/2 tsp dry italian seasoning
  • 1/4 tsp seasoned pepper
  • 1/2 tsp seasoned salt
  • 5-6 boneless chicken thighs

Instructions

  • Preheat oven to 375 degrees. Place melted butter in a shallow bowl. Place chicken thighs in a 3 quart casserole dish
  • Combine all the rest of the ingredients in a large freezer bag and shake to combine the seasonings
  • Brush the chicken thighs with the melted butter. Place the chicken thighs in the freezer bag and shake the bag to coat the chicken completely
  • Place the chicken back into the casserole dish and bake uncovered for 50 minutes

1 serving size equals 1 boneless skinless chicken thigh
each serving contains about 1.3 g net carbs

Ingredients

  • 1-2 sweet potatoes, thinly sliced
  • cooking spray
  • 1/2 tsp seasoned salt
  • 1/4 tsp seasoned pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Instructions

  • Preheat oven to 375 degrees. Line large baking sheet with foil and spray with cooking spray
  • Combine dry ingredients in a small bowl and whisk together. Place seasonings into a spice shaker
  • Place potato slices onto prepared baking sheet. Lightly spray potatoes with cooking spray
  • Sprinkle desired amount of seasonings over potatoes. Flip potatoes over and spray lightly with cooking spray
  • Sprinkle desired amount of seasonings over potatoes until both sides have the desired amount of seasonings
  • Bake for 30 minutes. Stir potatoes and bake 20-30 minutes more
