Low Carb Sugar Free Pumpkin Spice Cookies

Ingredients

  • 1/2 cup almond flour, or gluten free flour of choice
  • 1/2 cup oat flour use more almond flour if strict keto
  • 1/2 cup vital wheat gluten see notes for gluten free
  • 3/4 cup granulated stevia, or sweetener of choice
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 3/4 cup pumpkin puree
  • 1/8 cup pure maple if strict keto use brown Swerve instead
  • 1 large egg, room temperature
  • 1/4 cup oil of choice

Instructions

  • Preheat oven to 400 degrees. Line 2 large baking sheets with parchment paper
  • In a large mixing bowl combine almond flour, oat flour, vital wheat gluten, stevia, baking powder, cinnamon, nutmeg, ginger and salt
  • Whisk together until fully combined and no lumps left in the flour.
  • Add pumpkin puree, maple, egg, and oil. Stir with a wooden spoon until fully combined and no dry ingredients are left in the bowl. Let batter sit for 3 minutes
  • Scoop batter out 1 TBS at a time onto prepared baking sheets. Bake 10-12 minutes or until golden
  • Let cookies cool on the pan for at least 5 minutes then transfer to a wire rack to cool

Notes

FOR GLUTEN FREE: substitute 1/2 cup vital wheat gluten for 1/2 cup almond flour and add 1 tsp xanthan gum
1 serving equals 1 cookie  1 serving contains 3.6 g net carbs
if you are substituting oat flour for more almond flour and maple for brown Swerve 1 serving contains about 1 g net carbs
