Low Carb Sugar Free Pumpkin Spice Cookies

Servings 2 dozen
Ingredients
- 1/2 cup almond flour, or gluten free flour of choice
- 1/2 cup oat flour use more almond flour if strict keto
- 1/2 cup vital wheat gluten see notes for gluten free
- 3/4 cup granulated stevia, or sweetener of choice
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 3/4 cup pumpkin puree
- 1/8 cup pure maple if strict keto use brown Swerve instead
- 1 large egg, room temperature
- 1/4 cup oil of choice
Instructions
- Preheat oven to 400 degrees. Line 2 large baking sheets with parchment paper
- In a large mixing bowl combine almond flour, oat flour, vital wheat gluten, stevia, baking powder, cinnamon, nutmeg, ginger and salt
- Whisk together until fully combined and no lumps left in the flour.
- Add pumpkin puree, maple, egg, and oil. Stir with a wooden spoon until fully combined and no dry ingredients are left in the bowl. Let batter sit for 3 minutes
- Scoop batter out 1 TBS at a time onto prepared baking sheets. Bake 10-12 minutes or until golden
- Let cookies cool on the pan for at least 5 minutes then transfer to a wire rack to cool

FOR GLUTEN FREE: substitute 1/2 cup vital wheat gluten for 1/2 cup almond flour and add 1 tsp xanthan gum
