Quick Keto Meatball Sandwiches

This recipe is designed to teach everyone how to make quick keto meatball sandwiches.

Ingredients

Meatballs

  • 30 ml oil of choice (2 TBS)
  • 1 lb lean ground beef
  • 1 TBS dry Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 56 grams shredded mozzarella cheese (1/2 cup)
  • 23 grams freshly grated parmesan cheese (1/4 cup)

Sauce

  • 28 oz can crushed tomatoes
  • 1/2 tsp salt
  • 1 TBS dry Italian seasoning
  • 6 six inch hoagie or sub sandwich rolls see my Italian herb and cheese or plain sub sandwich rolls
  • sliced pepperoni, extra shredded mozzarella cheese and freshly grated parmesan cheese (optional)

Instructions

Meatballs

  • Preheat oil in a large skillet over medium heat 3 to 5 minutes or until heated. Stir together all the meatball ingredients except the cheeses in a large mixing bowl until fully combined. Gradually fold in the cheeses until fully combined. Place the meatballs in a single layer in the preheat oil.
  • Cook the meatballs for 2 to 3 minutes or until the underside of the meatball is browned. Turn the meatball. Continue cooking turning every 2 to 3 minutes until the meatballs are browned on all sides and no longer pink. remove the meatballs from the skillet and place on a paper towel lined plate to drain any excess grease.
  • Make sure the meatballs are in a single layer with space between each meatball while cooking. If needed cook the meatballs in 2 batches. Set the cooked meatballs aside while making the sauce.

Sauce

  • Stir together all the sauce ingredients in a medium mixing bowl until fully combined. Set aside. Drain the excess fat from your skillet once the meatballs are all done cooking. Return the meatballs to the skillet over medium heat. Pour in the sauce and stir to fully coat the meatballs.
  • Bring to a low boil. Cover, reduce heat to low and simmer 10 minutes or until heated through.

Assemble

  • Line bottom portion of each hoagie/sub roll with pepperoni (if desired) Top with 4 meatballs and desired amount of sauce. If desired top with desired amount of shredded mozzarella cheese and freshly grated parmesan cheese. If desired place on a lined baking sheet and toast in the oven at 400 degrees for 3 to 5 minutes until the cheeses are melted.
