Quick And Easy Keto “Apple” Cider Doughnuts (Nut And Gluten Free)

Ingredients

  • 85 grams coconut flour (3/4c)
  • 1 grams salt (1/4tsp)
  • 9 grams baking powder (2tsp)
  • 56 grams golden monkfruit sweetener or brown sweetener of choice (1/3c) more or less according to taste
  • 34 grams granulated monkfruit sweetenr or granulated sweetener of choice (3TBS) more or less according to taste
  • 5 grams ground cinnamon (2tsp)
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger all spices can be changed and adjusted according to taste
  • 2 grams xanthan gum (1/2tsp)
  • 4 large eggs, room temperature
  • 3/4 cup room temperature butter, softened
  • 1 tsp vanilla extract
  • 1/2 tsp maple or vanilla extract
  • 1 tsp apple extract or 1 TBS apple cider vinegar more or less according to how much apple flavor you prefer
  • 2 oz room temperature plain yogurt or sour cream (1/4c)
  • 2 oz warm keto apple cider or warm water (1/4c)

Topping

  • 1/4 cup butter, melted and cooled
  • 1/4 cup brown sweetener
  • 2 tsp ground cinnamon

Instructions

  • Preheat oven to 350 degrees. Lightly spray 8 doughnut cavities with cooking spray. Set aside
  • Sift or whisk all the dry ingredients into a large mixing bowl until there are no lump
  • Stir in the eggs until all the dry ingredients have been moistened. Stir the butter in until fully combined
  • Stir in all the extracts and the yogurt until fully combined and smooth. Stir in the apple cider or water until fully combined a smooth, moist dough has formed.
  • Divide the dough evenly among the doughnut cavities (a little over 4TBS of batter per cavity) Use fingers or a butter knife and spread the dough evenly throughout the cavities keeping the tops smooth
  • Place into preheated oven and bake at 350 for 12-15 minutes or until a tester comes out clean.
  • Remove from the oven. Allow to cool in the pan 15 minutes or until firm enough to transfer to a wire rack
  • Transfer doughnuts to a wire rack. Immediately make the topping

Topping

  • Place melted butter in a wide bowl. Stir together the sweetener and cinnamon in a separate wide bowl. Brush the tops of each doughnut with the melted butter (can also brush the whole doughnut with butter if you want coating to cover the whole doughnut) Use a spoon and sprinkle the desired amount of cinnamon topping over the doughnuts
  • Serve immediately. Store leftovers in an airtight container at room temperature up to 3 days
