Quick Keto Beef Stew

This recipe is designed to teach everyone how to make quick keto beef stew

  • 1 TBS olive oil
  • 2 1/2 cups chopped mixed vegetables of choice, adjust to desired amount I used jicama, celery, carrots and red onion
  • 29 oz beef broth (3 1/2 cups), adjust to desired amount
  • 14.5 oz canned diced tomatoes, undrained
  • 1 1/2 TBS dry seasonings of choice I used thyme, oregano, basil, onion powder and garlic powder
  • salt and pepper to taste


  • Place oil in a 5-quart saucepan over medium heat. Preheat the oil over medium heat 3 to 5 minutes or until warm. Add the vegetables and cook stirring occasionally 3 to 5 minutes or until softened
  • Add the remaining ingredients and stir to combine. Bring to a low boil. Cover, reduce heat to low and simmer at least 20 minutes or until the vegetables are tender.
  • Ladle desired amount in serving bowl. Serve warm. For leftovers, cool them completely and store in an airtight container in the refrigerator up to 3 days
