Quick Keto Chinese Flower Rolls

Ingredients

  • 96 grams coconut flour (3/4 cup)
  • 1 gram salt, optional (1/4tsp)
  • 10 grams baking powder (2tsp)
  • 4 grams xanthan gum (1tsp)
  • dry seasonings of choice, optional
  • 3 large eggs room temperture
  • 2 oz HOT water (1/4 cup)

Instructions

  • Sift dry ingredients into a large mixing bowl until fully combined and there are no lumps
  • Add eggs and stir until the dry ingredients are moist
  • Add the hot water and stir until a smooth dough forms
  • Form dough into a smooth ball and massage for 1 minute to absorb extra moisture
  • Form dough back into a smooth ball and place back into the mixing bowl. Allow to sit uncovered at room temperature 5 to 10 minuted to absorb moisture
  • While waiting fill a large saucepan about 1/3 way full with water and bring to a boil over medium heat
  • Place dough onto clean lined worksurface and roll into a rectangle about 1/4 inch thick
  • Lightly brush the top of the dough with the oil of your choice (about 1 1/2 to 2 TBS ) then scatter the desired amount of scallions (green onion) over the oil
  • Start at the wide longest end of the dough and roll up like you would a cinnamon roll. Use the parchment paper to brace the dough and keep dough smooth and tight at all times
  • Dampen fingers and rub along the seam to seal the seam and any cracks. Cut the roll into 12 to 16 portions. Make sure there are no cracks in dough
  • Place a steamer basket on top of the pan with boiling water. Make sure the water is not touching the basket. If no steamer basket check out my article on how to make a DIY steamer
  • Place the rolls flat side down into the steamer basket in a single layer. Leave space around the rolls for even cook
  • Cover and steam for 25 to 30 minutes or until rolls are no longer doughy
  • Remove steamer basket from the heat and allow rolls to sit about 5 minutes to firm up
  • Serve warm as a rice substitute with any saucy dish. Store leftovers in the refrigerator up to 3 days
