Keto Corn Syrup Substitute

This recipe is designed to teach everyone how to make quick and easy keto corn syrup substitute

Ingredients

  • 1/3 cup brown Swerve (only for dark corn syrup) if wanting light corn syrup than use granulated monkfruit sweetener or granulated sweetener of choice
  • 1/3 cup monkfruit sweetener or granulated sweetener of choice if making caramel allulose works best
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 1 cup water
  • 1/2 tsp vanilla extract, optional

Instructions

  • In a medium mixing bowl whisk together the brown Swerve (or granulated sweetener if making light corn syrup) monkfruit sweetener, xanthan gum and salt until fully combined and no lumps. Set aside
  • **If you are making light corn syrup and only using granulated sweetener you will need to add 1/4 tsp of cream of tartar or add 1 tsp lemon juice when you add the water. The acid helps the syrup not to crystalize. Brown Swerve contains acid fron the fruit concentrates that are in it so you do not have to add these when making the dark corn syrup
  • In a medium saucepan over medium heat bring the water to a very low boil. Reduce heat to medium low and gradually add the sweetener mixture a little at a time. Stir after each addition so the sweetener can fully dissolve. Continuously stir until the sweetener is completely dissolved
  • Stir continually and allow the mixture to come back up to a low boil. Do not allow to come to a full boil
  • Simmer stirring constantly about 2-3 minutes or until mixture begins to thicken. It will thicken more as it cools. If needed dampen a pastry brush and brush down any sweetener crystals that might be on the sides of the pan.
  • Once it has thickened remove from heat and stir in the vanilla extract if using. Let cool for about 30 minutes in the pan
  • Pour into a mason jar or airtight container and let it cool to room temperature. Use immediately or seal the lid and store at room temperature up tp 3 weeks

Ingredients

  • 1 cup water
  • 1 cup granulated sweetener of choice for dark corn syrup use brown sugar sweetener of choice
  • 1/2 tsp vanilla extract
  • 3/4 tsp xanthan gum

Instructions

  • Microwave water in a medium microwave safe bowl on high for about 2 minutes or until the water is boiling
  • Whisk in the sweetener for about 20-30 seconds or until fully dissolved
  • Microwave on high another 30 seconds or until smooth. Whisk in the vanilla until fully combined
  • Gradually add the xanthan gum in small amounts whisking while adding. Once all the xanthan gum is added whisk for another 20 seconds or until the xanthan gum is fully dissolved and thickened. Allow to cool to room temperature before using. Store in air tight container for up to 1 week.
