Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 1 cup

Ingredients

  • 1/3 cup brown Swerve (only for dark corn syrup) if wanting light corn syrup than use granulated monkfruit sweetener or granulated sweetener of choice
  • 1/3 cup monkfruit sweetener or granulated sweetener of choice if making caramel allulose works best
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 1 cup water
  • 1/2 tsp vanilla extract, optional

Instructions

  • In a medium mixing bowl whisk together the brown Swerve (or granulated sweetener if making light corn syrup) monkfruit sweetener, xanthan gum and salt until fully combined and no lumps. Set aside
  • **If you are making light corn syrup and only using granulated sweetener you will need to add 1/4 tsp of cream of tartar or add 1 tsp lemon juice when you add the water. The acid helps the syrup not to crystalize. Brown Swerve contains acid fron the fruit concentrates that are in it so you do not have to add these when making the dark corn syrup
  • In a medium saucepan over medium heat bring the water to a very low boil. Reduce heat to medium low and gradually add the sweetener mixture a little at a time. Stir after each addition so the sweetener can fully dissolve. Continuously stir until the sweetener is completely dissolved
  • Stir continually and allow the mixture to come back up to a low boil. Do not allow to come to a full boil
  • Simmer stirring constantly about 2-3 minutes or until mixture begins to thicken. It will thicken more as it cools. If needed dampen a pastry brush and brush down any sweetener crystals that might be on the sides of the pan.
  • Once it has thickened remove from heat and stir in the vanilla extract if using. Let cool for about 30 minutes in the pan
  • Pour into a mason jar or airtight container and let it cool to room temperature. Use immediately or seal the lid and store at room temperature up tp 3 weeks

Great recipe, but can this corn syrup replacement be used to make peanut brittle? And if not, what can it be used for? Thanks!

  • The You Tube video for the 5 minute Keto Corn Syrup recipe seems different than the hand written recipe above. It calls for 1/4 tsp Cream of Tarter on the you tube video for the regular white sugar substitute, but does not mention cream of tartrer above that I could see.

    • The cream of tartar is optional. It’s main purpose is to help the corn syrup not to crystalize when it is stored

      • I was going in the kitchen to make this and realized the written recipe calls for 1/3 C sweetener, but the video version calls for 1C – which is correct?

    • I have not tried it in modeling chocolate. So far any recipe that I have tried with this as a corn syrup substitute has worked

    • Other than peanut brittle I do not have any hard candy recipes. I will work on that and see what I come up with

  • With Thanksgiving coming up, I’m wondering if you have made Pecan pie with this, and if it tastes just like “real” pie? Thank you for this – saved me a fortune in buying even more expensive keto ingredients!

    • Yes, I have made pecan pie with this. This corn syrup substitute works in any recipe that calls for corn syrup. It has a very neutral flavor and should not affect your recipe

Hey there Janet~ just curious if one of the two recipes above was your first version, and/or is it simply two different ways of making corn syrup? *I do understand that one recipe gives instructions for making it either light or dark corn syrup, but am actually asking about the two recipes in general, and which one of the two is your preferred method & ingredient amounts~ as I noticed those are a bit different as well. Thanks, in advance ~ Samantha in AZ

    • One recipe is a stovetop version and the other is a microwave version. I use them both. My preferred method is the stovetop but when I don’t feel like waiting, I use the microwave version.
