Quick Keto Doughnut Holes/Munchkins (Nut Free And Gluten Free)

Ingredients

  • 86 grams coconut flour (3/4 cups)
  • 5 grams baking powder (1 TBS)
  • 12 grams golden monkfruit sweetener or brown sweetener of choice (1 TBS)
  • 1/4 tsp salt
  • 45 grams monkfruit sweetener or granulated sweetener of choice (1/4 cup) more or less according to choice
  • 3 large eggs, room temperature
  • 1/2 cup room temperature butter, softened
  • 1/4 cup plain Greek yogurt or sour cream, room temperature
  • 1 tsp vanilla extract

Glaze

  • 108 grams powdered monkfruit allulose blend or powdered sweetener of choice (3/4 cup)
  • 3 TBS milk of choice, room temperature more or less as needed

Instructions

  • In a large mixing bowl sift or whisk together all the dry ingredients until there are no lumps
  • Stir in the eggs until all the dry ingredients are moistened. Add the butter and stir until fully combined. Stir in the yogurt and vanilla until fully combined and a smooth dough has formed
  • Form dough into a ball and massage for 1 minute to absorb excess moisture. Form back into ball and place back into mixing bowl. Place in the refrigerator and chill 10 minutes to firm up the dough
  • Line a clean worksurface with parchment paper. Remove from the refrigerator. Scoop the dough out 2 tablespoons at a time and roll into a smooth tight ball. Make sure there are no cracks in the ball. Place onto prepared lined worksurface
  • Pre heat air fryer to 350 degrees for 3 minutes or according to manufacture directions
  • Spray the bottom of the air fryer basket or drawer with cooking spray. Place the dough balls in a single layer in the prepared air fryer basket or drawer. Make sure the dough balls are slightly spaced in the air fryer.
  • Air fry at 350 degrees for 6 minutes or until golden. Check at 3 minutes to make sure they are not sticking.
  • Once cooked open the fryer drawer or basket. DO NOT REMOVE THE DOUGHNUT HOLES. The doughnut holes will be very soft but will firm as they cool. Allow the doughnut holes to cool in the air fryer drawer or basket for about 5 minutes or until they can be easily removed
  • Transfer to a wire rack and allow to firm up for another 5 minutes before putting on the glaze

Glaze

  • Place a wire rack over a large piece of parchment paper. Place the powdered sweetener in a small wide bowl. Use a fork and stir the milk in 1 tablespoon at a time until the glaze is smooth
  • Place doughnut holes in the glaze one at a time. Use a spoon and spoon the glaze over the top of the doughnut holes and let it drip down the sides of the doughnut holes until the holes are fully coated. Place the coated holes onto the prepared wire rack. Let the holes sit about 15 minutes or until the glaze is firm
  • Eat immediately or store leftovers in an airtight container at room temperature up to 3 days
