Quick Keto Garlic Knots

Ingredients

  • 56 grams coconut flour (1/2 cup)
  • 1/4 tsp salt
  • 14 grams baking powder (1TBS)
  • 1/2 tsp xanthan gum
  • 1 tsp garlic powder
  • 1 tsp dry oregano
  • 1/2 tsp dry basil
  • 1/2 tsp onion powder
  • 3 large eggs, room temperature
  • 1/4 cup butter, melted and cooled
  • 60 grams shredded mozzarella cheese (1/2 cup)

Topping

  • 2 TBS butter, melted
  • 1/2 tsp dry oregano
  • 1/2 tsp garlic powder

Instructions

  • Preheat oven to 350 degrees. Line large baking sheet with parchment paper
  • Sift or whisk the dry ingredients into a large mixing bowl until there are no lumps in the dry ingredients
  • Add the eggs and butter then stir to fully combined. Once combined stir and extra 20-30 seconds to absorb extra moisture
  • Massage dough for 30 seconds to test the texture. Dough should come together and easily form a smooth ball
  • Break dough ball up and gradually fold in the mozzarella cheese until it is evenly distributed through out the dough. Test the dough buy rolling a small portion of the dough into a ball in your hands. If comes together smoothly it is the right texture. If it does not come together smoothly add water 1 TBS at a time until the dough forms a smooth ball
  • Divide dough into 8 portions. Line a clean worksurface with parchment paper
  • Place a portion of the dough onto the lined worksurface and roll into a log. Shape the dough into a knot or twist into a rope. (see video on how to shape into a knot) Place shaped dough knots onto prepared baking sheet

Topping

  • Place all the topping ingredients in a small bowl. Use a fork and stir to fully combine
  • Brush the topping over the prepared knots on the baking sheet. Bake at 400 degrees 10-12 minutes or until golden
  • Remove allow to cool on pan about 10 minutes to firm up. Remove to wire rack. Serve warm or cool completely. Store leftovers in an airtight container at room temperature up to 3 days
