Quick Keto Honey Substitute

Ingredients

  • 8 oz water (1 cup)
  • 2-3 grams xanthan gum, divided (1 tsp)
  • 100 grams golden monkfruit sweetener or brown sugar sweetener of choice (1/2 cup)
  • 1/8 tsp salt
  • 8 grams honey flavoring or maple extract (1 tsp), adjust to taste

Instructions

  • Combine water, sweetener, and salt in a medium saucepan over medium heat.
  • Whisk constantly until mixture comes to a low boil and sweetener is fully dissolved
  • Whisk continuously and gradually add 1/2 tsp of the xanthan gum. Allow the xanthan gum to dissolve after each addition whisking constantly. Once the xanthan gum is fully added whisk vigorously for about 30 seconds to make sure the xanthan gum is fully dissolved
  • Bring back to a low boil. Simmer without stirring about 3 minutes or until the mixture is a consistency of thin syrup
  • Remove from the heat. Whisk in the extract until combined. Whisk continuously and gradually add the remaining 1/2 tsp of xanthan gum. Once the xanthan gum is fully added whisk vigorously for another 30 seconds or until the xanthan gum is fully dissolved and the mixture is thick and sticky
  • Spoon "honey" into a mason jar or airtight container. Allow to cool completely at room temperature before putting an airtight lid on the container. The "honey" with thicken up more as it cools. Store in airtight container in the refrigerator up to 1 month. If this thickens after being stored microwave for a few seconds until it becomes your desired consistency

    • Much like regular honey this “honey” has an indefinite lifespan. The main thing is to check and stir it up every day. If it crystalizes just pop it in the microwave a couple seconds when you are ready to use it

  • Hi. Can you tell me how the weight compares to honey? My favourite recipe calls for 175g of honey but I’m not sure how much of this I will need? Can’t wait to try it! Thanks!

    • This measures out the same as honey. If your recipe calls for 175 gram of honey use 175 grams of this honey substitute
