Ingredients

  • 85 grams coconut flour (3/4 cups)
  • 13 grams baking powder (1 TBS)
  • 1 tsp brown sweetener of choice
  • 1/4 tsp salt
  • 1 tsp xanthan gum
  • 3 large eggs, roomtemperature
  • 2 oz warm water (1/4 cup)
  • 180 ml oil of choice (3/4 cup)
  • 1 tsp maple extract

Instructions

  • Preheat oven to 400 degrees. Spray 4 four inch diameter or5 three inch burger molds with cooking spray
  • In large mixing bowl sift or whisk all the dry ingredients until there are no lumps
  • Stir eggs and water into the dry ingredients until all the dry ingredients have been moistened
  • Stir the oil and extract in until fully combined and a moist dough has been formed
  • Form dough into smooth ball and massage 1 minutes to absorb extra moisture. Form the dough back into a ball and place back into the mixing bowl. Allow to sit 5 minutes to absorb extra moisture and allow ingredients to bind together
  • Divide the dough evenly throughout the prepared bun molds. If using a 3 inch diameter mold scoop 1/3c dough into 5 bun molds. If using 4 inch molds scoop dough 1/2c at a time into each mold
  • Roll each portion into a tight smooth ball and slightly flatten the tops of each ball. Brush the tops of each bun lightly with egg wash (1 egg stirred together with 1TBS water)
  • Place into preheated oven. If using 3 inch molds bake at 400 degrees 15-17 minutes. If using 4 inch molds bake at 400 degrees 17-20 minutes. Buns should be golden and a tester should come out clean
  • Remove from oven. Allow to cool in pan 30 minutes or until firm. Remove from molds. Transfer to a wire rack and allow to cool completely before slicing
  • Slice in half horizontally through the middle to create a top and a bottom bun. Use immediately or store leftovers in an airtight container at room temperature up to 3 days

  • Hi Janet,

    Do these have the texture of Kaiser rolls? Will they hold up under a hardy sandwich. Also, does the coconut flour impart a coconut taste? If yes, can you substitute lupin flour for the coconut flour? Or can you use a blended flour instead? I eat Nuco coconut wraps. I absolutely love them but they definitely taste like coconut. I would like to use your recipe for hot pastrami sandwiches with hot pepper cheese.

    • Yes this is a very sturdy bread and will hold up very nicely. If you are concerned about any coconut flavor you can always add some dry seasonings or spices to cover up any coconut taste. I do this all the time when making bread. No you can not substitute any other flour or flour blend as a 1 to 1 substitute for coconut flour. Coconut flour is MUCH more absorbent than any other flour and reacts VERY differently with liquid. It is a very delicious and unique flour.
