Quick Keto Mini Bagels

This recipe is designed to teach everyone how to make quick keto mini bagels

Ingredients

  • 120 grams  coconut flour, (1 cup)
  • 1/4 tsp salt
  • 15 grams  baking powder (1 TBS)
  • 2 grams  xanthan gum or psyllium husk powder (2tsp)
  • 6 grams  instant dry yeast, optional ( 2 tsp) this is just for flavor
  • dry seasonings of choice, optional
  • 3 large  eggs, room temperature
  • 1/2 cup  butter melted and cooled
  • 123 grams  plain yogurt or sour cream, room temperature (1/2 cup)
  • 2 TBS  warm water more or less depending on density of coconut flour

Instructions

  • Preheat oven to 400 degrees.Lightly spray 8 bagel or doughnut molds
  • Sift dry ingredients into a large mixing bowl until there are no lumps
  • Stir in the eggs until all dry ingredients are moist. Stir in remaining ingredients until fully combined and a smooth dough has formed
  • Form dough into a ball and massage for 1 minute to be sure of the texture.The dough should be smooth and slightly moist
  • Form dough back into a ball and place back into mixing bowl. Allow to sit at room temperature for 5 minutes to absorb any extra moisture
  • Divide dough into 8 equal portions (a little more than 1/4 cup of dough in each portion )
  • Line a clean worksurface with parchment paper nd form each portion into an 8 inch long log . Place log into prepared molds and press evenly throughout each mold
  • Place into preheated oven and bake at 400 degrees for 10 to 15 minutes until golden
  • Remove from the oven and allow to cool in the pan 10 minutes to firm up.
  • Remove from the molds. Transfer to a wire rack and allow to cool completely before slicing. Eat mmediately or store in airtight container at room temperature up to 1 week
