Quick Keto Stuffed Biscuits

Ingredients

  • 120 grams coconut flour (1 cup)
  • 15 grams baking powder (1 TBS)
  • 1/4 tsp salt
  • dry seasonings of choice, optional
  • 3 large eggs, room temperature
  • 1/2 cup very soft room temperature butter
  • 123 grams room temperature plain yogurt or sour cream
  • 63 grams shredded cheese of choice (3/4 cup) adjust to taste
  • 80 grams finely chopped ham (1/2 cup) adjust to taste

Instructions

  • Preheat oven to 400 degrees. Line 2 large baking sheets with parchment paper. Set aside
  • Sift all the dry ingredients into a large mixing bowl until everything is fully combined and there are no lumps in the dry ingredients
  • Stir in the eggs until all the dry ingredients are moist. Stir in the butter and yogurt until everything is fully combined and a smooth dough us formed
  • Gradually fold in the cheese and ham until fully combined and evenly distributed throughout the dough
  • Scoop dough out about 3 TBS at a time onto the prepared baking sheets. Roll each scoop into a smooth ball and place about 2 inches apart on the baking sheets. Flatten the tops of the dough balls and form into a biscuit shape
  • Bake at 400 degrees 15 to 20 minutes or until golden. Remove from oven. Allow to cool on pan about 5 minutes. Eat immediately or transfer to a wire rack and cool completely. Store leftovers in airtight container in the refrigerator up to 5 days
