Ingredients

Sauce

  • 1/2 pound lean ground beef
  • dry seasonings of choice
  • 2 cups keto pasta sauce of choice
  • 1 1/2 tsp dry Italian seasonings

Cheese Filling

  • 6 oz ricotta cheese
  • 1 large egg
  • 11 grams freshly grated Parmesan cheese
  • salt and pepper to taste

Noodles

  • 45 grams coconut flour
  • 1/2 tsp xanthan gum
  • dry seasoning of choice. (optional)
  • 4 large egg yolks, room temperature

Instructions

Sauce

  • Place ground beef in a large skillet over medium heat
  • Season beef according to taste. Chop beef into small pieces and cook until no longer pink
  • Drain the beef and place back into skillet. Add pasta sauce and seasonings. Stir to combine
  • Bring to a low boil over medium heat. Simmer 5 minutes to combine flavors. Set aside

Cheese Filling

  • Place ingredients in a small bowl and stir until fully combined. Set aside

Noodles

  • Place 6 cups of water in a large skillet and bring to a full boil
  • Whisk together flour, xanthan gum and seasonings ( if using ) in a large mixing bowl until there are no lumps
  • Add the egg yolks and stir until the eggs begin to combine. Use fingers and massage the dry ingredients into the egg yolks until fully combine and you have a dry firm dough
  • Divide dough into 4 portions. Roll each portion out to a 7 x 2 1/2 inch strip
  • Place noodles in a single layer into the boiling water. Bring back to a low boil over medium heat
  • Cover and cook 5 to 7 minutes or until white and firm. Remove cooked noodles with a slotted spatula and place on a plate to drain

Assemble

  • Place 1/2cup of meat mixture in a thin layer across the bottom of an 8 x8 inch cassserole dish
  • Place 2 noodles on top. Top the noodles with the cheese sauce and spread evenly
  • Top with desired amount of shredded mozzzarella cheese. Spread half of the meat mixture over the mozzarella
  • Top with 2 more noodles and the remaining meat sauce. Top with 1 1/2 cups of shreddded mizzzarella cheese
  • Place in preheated oven Bake at 375 degrees for 20 minutes or until heated through
  • Remove from oven. Let stand 5 minutes before serving

    MomJim here, it was seriously delicious!!! I’m a mother of five. I have too cook two separate meals. I made this lasagna with the difference of not boiling the noodles. I threw it on a griddle with a little bit of oil (I was running out of time, lol) . It shrunk a little. Three of my kids tried it and asked me if they could have my keto lasagna instead of their regular dinner. I’d say, that was a success! Thank you again!!!
