Simple Keto Chocolate Cake

This recipe is designed to teach everyone how to make simple keto chocolate cake

Ingredients

  • 84 grams coconut flour (3/4 cup)
  • 20 grams cocoa powder (1/4 cup)
  • 1/4 tsp salt
  • 10 grams baking powder (2 tsp)
  • 100 grams granulated sweetener of choice (1/2 cup), adjust to taste I use granulated monkfruit sweetener
  • 1 tsp instant coffee powder, optional this will intensify the chocolate flavor
  • 4 large room temperature eggs
  • 1/2 cup butter, melted and cooled
  • 60 grams room temperature plain yogurt or sour cream (1/4 cup)
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees. Line a 9 x 5 inch loaf pan with parchment paper. Allow the paper to hang over the sides for easy removal. Sift the dry ingredients into a large mixing bowl until there are no lumps
  • Stir in the eggs, butter, plain yogurt and vanilla until a smooth dough forms. Form the dough into a smooth ball. Place the dough into the prepared pan. Press evenly throughout the pan
  • Place into preheated oven. Bake at 350 degrees for 25 to 30 minutes or until a tester comes out clean. Remove from the oven and allow to cool in the pan at least one hour to firm up
  • Grasp the overhanging parchment paper. Transfer to a wire rack and allow to cool completely Before frosting. If desired spread desired frosting, glaze or topping of choice over top of the cake. Slice into desired size pieces and serve

2 Minute Keto Peanut Butter Glaze

This recipe is designed to teach everyone how to make 2 minute keto peanut butter glaze

Ingredients

  • 128 grams creamy peanut butter (1/2 cup)
  • 79 ml room temperature milk of choice (1/3 cup) my keto milk of choice is coconut milk
  • 1 tsp vanilla extract
  • 125 grams powdered sweetener I use powdered monkfruit/allulose blend

Instructions

  • Beat the peanut butter and milk of choice on low until fully combined and smooth. Turn mixture on low and gradually add in the powdered sweetener until fully combined and smooth. Gradually increase the speed to medium and beat 1 to 2 minutes until creamy. Spread on cake, cupcakes, cookies or any recipe that requires peanut butter glaze
