Ingredients

  • 75 grams coconut flour (2/3 cup)
  • 15 grams baking powder
  • 1/4 tsp salt
  • 100 grams granulated sweetener of choice (1/2 cup), adjust to taste I use granulated monkfruit sweetener
  • 3 large room temperature eggs
  • 1/4 cup very soft room temperature butter
  • 105 grams room temperature plain yogurt or sour cream (7 TBS)
  • 15 grams vanilla extract (1 TBS) adjust to taste

Instructions

  • Preheat oven to 350 degrees. Lightly spray 8 cupcake molds with cooking spray (silicone molds work best with coconut flour) or line an 8 x 8-inch cake pan with parchment paper. if using a cake pan allow the paper to hang over the sides for easy removal
  • Sift or whisk all the dry ingredients into a large mixing bowl until there are no lumps. Stir the eggs in until all the dry ingredients are moist, Stir the butter, yogurt and extract in until a smooth dough has formed
  • Scrape down the sides of the bowl and push the dough to the center of the bowl. Form the dough into a smooth ball and massage in hands for about 30 seconds to make sure of the texture. The dough should be lightly moist and hold its shape well
  • Form dough back into a smooth ball and place back into mixing bowl. Divide dough evenly among the prepared cupcake molds or place dough into prepared cake pan. Press dough evenly throughout the cupcake molds or cake pan
  • Place into preheated oven. Bake at 350 degrees for 20 to 25 minutes or until golden and a tester comes out clean. If making a cake cook 30 to 35 minutes or until a tester comes out clean
  • Remove from the oven. Allow to cool in pan at least 30 minutes or until firm
  • Carefully remove cupcakes from there molds. If using cake pan carefully grasp the overhanging paper and gently lift out the cake. Transfer the cupcakes or cake to a wire rack and allow to cool completely before frosting or serving
