Sugar Free Barbeque Chicken One Dish Meal

Ingredients

  • 6-8 boneless, skinless chicken thighs
  • 1-2 sweet potatoes, thinly sliced
  • 4-6 carrots, thinly sliced
  • 1-2 red onions, thinly sliced
  • 1-2 red bell peppers, thinly sliced

One Minute Barbeque Sauce

  • 1 cup tomato sauce
  • 1/2 cup molasses, or sweetener of choice see notes
  • 1/4 cup apple cider vinegar
  • 1/4 tsp hot sauce
  • 1/4 cup honey mustard
  • 2 TBS Worcestershire sauce
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper, optional

Instructions

  • Preheat oven to 425 degrees and prepare a 3 quart casserole dish
  • In a medium mixing bowl whisk together all the barbeque sauce ingredients until fully combined and smooth. Set aside
  • Layer the carrots across the bottom of a 3 quart casserole dish. Season carrots with seasoned salt and seasoned pepper.
  • Layer sweet potatoes on top of carrots. Season potatoes with seasoned pepper and garlic salt
  • Place chicken thighs in single layer on top of potatoes. Spoon desired amount of barbeque sauce over chicken thighs
  • Sprinkle onions and peppers over top of chicken, Bake uncovered for 30-45 minutes or until chicken is no longer pink and vegetables are tender

Notes

If using a sweetener other than molasses make sure the sweetener has a similar taste to molasses or brown sugar
