While the meatballs are browning add all the sauce ingredients except the optional tomato sauce to a food processor and pulse for about 30 seconds or until the sauce is the desired consistency
Once the sauce is combined and the meatballs are browned.remove the meatballs and set them to the side.
Drain any extra fat and brown flecks that are in the pan. Add sauce mixture to the skillet
Add the browned meatballs and stir to coat the meatballs. If desired add the extra 8 oz of tomato sauce.
Bring the sauce to a low boil over medium heat. Cover reduce the heat to low and simmer for 15 minutes.
While the sauce is simmering prepare the desired low carb noodles or veggie noodles of your choice
Once the sauce is done simmering spoon the desired amount of sauce and meatballs over the desired amount of low carb noodles or veggie noodles and top with freshly grated Parmesan cheese and olives if desired
