Low Carb Peanut Butter Chocolate Chip Bars

This recipe is designed to teach everyone how to make low carb chocolate peanut butter bars

Ingredients

  • 3/4 cup shortening
  • 1 large egg, room temperature
  • 3/4 cup monkfruit sweetener or granulated sweetener of choice
  • 3/4 cup brown Swerve or brown sugar substitute
  • 1/3 cup peanut butter
  • 1 1/2 cups almond flour
  • 1 cup garbanzo flour or low carb flour of choice
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • 1 cup mini chocolate chips
  • 2 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  • Preheat oven to 350 degrees. Lightly spray or line an 8x8 baking dish.
  • In a medium bowl whisk together almond flour, garbanzo flour, baking powder, xanthan gum and salt until fully combined
  • In a mixer bowl combine shortening, eggs and peanut butter. Beat on low 30-40 seconds or until smooth
  • Add monkfruit sweetener and brown Swerve. Beat on low 30 seconds or until fully combined.
  • Slowly add dry ingredient to wet ingredients and beat on low 25-30 seconds or until fully combined
  • Use a wooden spoon and gently fold in the chocolate chips until they are distributed evenly throughout the batter
  • Spread batter evenly into prepared baking dish and bake 15-20 minutes or until a tester comes out clean. Every oven is different so it is best to check after 12 minutes
  • Let sit in the pan for 10 minutes then cut into bars of desired size. After the bars are cut let them cool completely in the pan before removing them. They will firm up slightly while they cool.

Notes

1 serving size is 2x4 inch bar. 1 serving contains about 21 g net carbs
If you substitute the garbanzo flour for more almond flour 1 serving contains about 16.3 g net carbs.
You can substitute the chocolate chips for keto chocolate or pure cocoa chips and this will greatly reduce the carb count.
