Place 4 wide mouth mason jars upside down into an electric skillet or large stove top skillet. If you do not have mason jar lids use a circular, heat safe object with about a 3 inch diameter
Spray lids and skillet with cooking spray
Crack 1 egg into each lid. Use a fork and gently break the yolk
Pour 2-4 TBS water (depending on skillet size) into skillet AROUND the mason lids. Do not pour water into eggs.
Turn heat onto medium. If using an electric skillet turn heat onto 325 degrees. Let skillet heat for about 1-2 minutes or just until warm
Cover the skillet and let cook for 3 minutes or until the eggs are cooked
Uncover, lightly sprinkle with desired amount of salt, pepper and dry cilantro (if using) Lightly sprinkle 2 of the eggs with the desired amount of shredded cheese
Cover and cook 1 minute more or until the cheese is melted
Use a spatula or tongs and remove the lid with the egg that does not have cheese. Turn the egg onto a serving plate. If it does not slide right out give the egg a nudge with fingers
Remove the other lid with the egg that has cheese on it. Turn the egg onto the plate nest to the egg without cheese. Turn the egg with the cheese, Cheese side up.
Top cheesy egg with desired toppings. (I usually top mine with mashed avocado and a sausage patty, bacon or ham
Place the egg without the cheese on top of the toppings to create a sandwich. Repeat until you have the desired amount of sandwiches. Serve warm
