Keto Swedish Meatballs

This recipe is designed to teach everyone how to make quick and easy keto Swedish meatballs

Ingredients

Meatballs

  • 1 lb lean ground beef or ground meat of choice
  • 1 large egg
  • 2 TBS milk of choice
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 3/4 cup low carb bread crumbs or crushed pork rinds

Sauce

  • 1 cup beef or bone broth
  • 1 cup sour cream
  • 1 TBS soy sauce
  • 1/2 tsp ground black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dry thyme or dry rosemary
  • 1/2 tsp xanthan gum

Instructions

Meatballs

  • Preheat oven to 400 degrees. Line a large baking sheet with foil. Lightly spray the foil with cooking spray
  • Place the ground beef in a large mixing bowl. Chop the meat into small pieces
  • Add the egg and stir until the meat is fully coated with the egg. Add the milk and stir again until the milk is fully combined
  • Add onion powder, salt, garlic powder and pepper. Stir to fully distribute the seasonings throughout the meat.
  • Gradually fold in the bread crumbs/pork rinds in small amounts until they are fully distributed in the meat. Massage the meat in between the palms of your hands until all the ingredients are fully combined in the meat.
  • Scoop meat mixture out 1-2 TBS at a time onto prepared baking sheet. Form each scoop into a tight ball and place back onto the baking sheet
  • Bake at 400 degrees for 18-20 minutes or until no longer pink.

Sauce

  • In a large skillet over medium heat whisk together broth, sour cream and soy sauce until smooth
  • Add pepper, onion powder, garlic powder, and dry thyme. Whisk until everything is fully combined
  • Gradually sprinkle in the xanthan gum. Whisk it in as you add the xanthan gum until it is fully combined and the sauce is smooth
  • Bring the sauce to a low boil over medium heat. Reduce the heat to medium low and simmer for about 10 minutes or until the sauce is thick. The sauce will thicken more as it cools
  • Add the cooked meatballs and stir to fully coat the meatballs in the sauce. Bring back up to a low boil. Allow to simmer about 5 minutes to allow the flavors to set in.
