Ingredients
2TBSroom temperature butter
98gramspowdered sweetener of choice (14 TBS)
18gramsroom temperature plain Greek yogurt or coconut cream (1 TBS)
1/4tspvanilla extract or extract flavor of choice
Instructions
Line a large baking sheet with parchment paper
In a large mixer bowl beat butter on medium for about 30 seconds or until creamy
Reduce speed to low. Gradually add the powdered Swerve in small amounts, Stop mixer and scrape down the sides as needed, Once the Swerve is completely added increase the speed to medium. Beat on medium for about 30 seconds or until crumbly
Add the yogurt and vanilla or extract of choice. Beat on medium for about 30 seconds or until a "dough" begins to form
If desired fold in some add ins such as shredded coconut, crushed nuts etc. Cover with plastic wrap and freeze for about 10 minutes or until able to be scooped
Scoop mixture out 1 TBS at a time onto prepared baking sheet. Form each scoop into a tight ball and place back onto the baking sheet. If desired roll the balls into toppings such as melted chocolate, crushed nuts, crushed candy etc.
Place in the refrigerator about 15 minutes or until the toppings are set. If dipped in melted chocolate set in refrigerator 30 minutes or until the melted chocolate is firmed. Store leftovers in an airtight container in the refrigerator up to 5 days
