Preheat electric griddle or electric skillet to 350 degrees. Lightly spray griddle with cooking spray. If no electric griddle or skillet preheat a large stovetop skillet for about 5-7 minutes or until warm
In a large mixing bowl sift or whisk together the coconut flour, baking powder, salt and sweetener until fully combined and no lumps are in the dry ingredients
Add the eggs and whisk together until fully combined and all the dry ingredients are moist
Add the oil, vanilla, sour cream and milk. Whisk together until fully combined and smooth batter is formed
Pour the batter 1/2 cup at a time onto preheated griddle or skillet. Cook 3 minutes or until bubbles form on top and the pancake can be lifted easily from the griddle or skillet
Turn the pancake over. Cook another 2-3 minutes or until the pancake can be easily lifted and is brown o both sides. Serve with favorite toppings
