Preheat waffle iron according to manufacturer directions. lightly spray waffle iron with cooking spray
In a large mixing bowl whisk or sift together the coconut flour, sweetener, baking powder, and salt until fully combined and no lumps are in the dry ingredients
Add the eggs. Whisk until fully combined and all the dry ingredients are moist
Add the milk, oil and vanilla. Whisk until fully combined and smooth dough/batter has formed. This will be thick but should spread easily
Scoop dough/batter out about 1/2 cup at a time and place in the center of each waffle compartment. Use the back of a spoon or heat safe spatula and spread the dough/batter evenly across each waffle compartment
Close the lid of the waffle iron and cook according to manufacturer directions. Use a heat safe spatula and to remove the waffles once they are done cooking. Serve with desired toppings
