Easy Keto Coconut Flour Waffles

This recipe is designed to teach everyone how to make easy coconut flour waffles

Ingredients

  • 1 cup coconut flour
  • 1/4 cup granulated monkfruit sweetener or granulated sweetener of choice
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 6 large eggs, room temperature
  • 1 cup milk of choice
  • 1/2 cup oil of choice
  • 1 tsp vanilla extract

Instructions

  • Preheat waffle iron according to manufacturer directions. lightly spray waffle iron with cooking spray
  • In a large mixing bowl whisk or sift together the coconut flour, sweetener, baking powder, and salt until fully combined and no lumps are in the dry ingredients
  • Add the eggs. Whisk until fully combined and all the dry ingredients are moist
  • Add the milk, oil and vanilla. Whisk until fully combined and smooth dough/batter has formed. This will be thick but should spread easily
  • Scoop dough/batter out about 1/2 cup at a time and place in the center of each waffle compartment. Use the back of a spoon or heat safe spatula and spread the dough/batter evenly across each waffle compartment
  • Close the lid of the waffle iron and cook according to manufacturer directions. Use a heat safe spatula and to remove the waffles once they are done cooking. Serve with desired toppings
