90 Second Keto Coffee Mug Cake (Nut Free And Gluten Free)

This recipe is designed to teach everyone how to make quick keto coffee mug cake in 90 seconds

Ingredients

  • 1 TBS butter
  • 2 TBS cream cheese
  • 2 TBS coconut flour
  • 1/4 tsp ground cinnamon
  • 1/4 tsp instant coffee or espresso
  • 1/2 tsp baking powder
  • 2 TBS monkfruit sweetener or granulated sweetener of choice
  • 1 large egg, room temperature

Instructions

  • In a 12oz microwave safe mug place the butter and the cream cheese (mug must be at least 12 ounces the cake rises and falls while cooking) Microwave on high about 20 seconds or until the butter and cream cheese are soft
  • Use a fork and stir the soft butter and cream cheese until combined. Add the remaining ingredients. Use a fork and stir until fully combined and smooth
  • Use a spatula and scrape down the sides of the mug. Microwave on high for 1 minute and 30 seconds or until the top of the cake is firm and a tester comes out clean. Microwave times will vary depending on the microwave wattage. My wattage is 1100 watts
  • Allow to cool at least 5 minutes. Eat as is or top with the topping of choice
