2 Minute Keto Coffee Ice Cream (Dairy Free And Vegan)

Ingredients

  • 10 oz can full fat coconut milk
  • 2/3 cup coconut cream or heavy whipping cream
  • 1/4 cup powdered monkfruit/allulose blend or powdered sweetener of choice
  • 1 TBS finely ground coffee more or less according to taste
  • 1 TBS alcohol based vanilla extract
  • 1 1/2 tsp xanthan gum

Instructions

  • Pour the 10oz can of coconut milk into ice cube molds. Place in freezer. Freeze at least 1-3 hours or until frozen solid
  • Place 16 of the coconut ice cubes into a large blender. Make sure the blender is able to blend ice
  • Add the cream, powdered sweetener, fine coffee and vanilla. Sprinkle in the xanthan gum. Pulse in 5-10 second intervals until the coconut cubes are chopped
  • Blend on high 1 minute or until the texture of soft serve ice cream. Eat as is or place in freezer safe container and freeze 1 hour or until desired consistency
