1cupcoconut cream
2TBSgranulated sweetener of choiceI used granulated allulose for best texture
1/2tspvanilla extract (optional)
Instructions
Place whisk attachment on a standing mixer. Place all ingredients in a large mixer bowl. Whisk on low 10 seconds or just until the ingredients begin to come together
Increase speed to medium and whisk on medium 2-3 minutes. Increase speed to medium-high and beat on medium-high another minute or until peaks have formed. If peaks have not formed continue whisking on medium-high in 15 second intervals until the peaks have formed. Do not overbeat You know it is done when you can take your whisk out and a pointed peak has formed on the bottom. The peak should stay pointed when you turn your whisk upside down
Use immediately or store in an airtight container in the refrigerator up to 3 days. If cream deflates while in the refrigerator. Whisk on high 10-15 seconds or until it becomes whipped again
