Preheat air fryer to 400 degrees. If no air fryer preheat a couple tablespoons of oil in a large skillet over medium heat until hot
In a large mixing bowl sift or whisk together all the dry ingredients until fully combines and no lumps are in the dry ingredients
Add the eggs and stir until fully combined and all the dry ingredients are moist. Add the oil and stir until fully combined
Add the WARM water and stir for at least 30 seconds to fully combine and activate the xanthan gum. Form dough into ball and massage about 1 minutes to absorb excess moisture and help the xanthan gum to "stretch" the dough
Divide dough into 5 portions. Line worksurface with a 7 x 5 inch piece of parchment paper. Place one portion of the dough into the center of the paper and roll or press the dough out to a 5 x 7 inch rectangle . Repeat until all the dough has been rolled out to 5 x 7 inch rectangles
Spread a thin layer of sauce over each rectangle ( about 1-2 tablespoons) If making pizza rolls spread sauce almost to the edges/ If making pizza pockets leave room around the edges
Sprinkle the desired amount of cheese and toppings over the sauce. Grasp the parchment paper on the short end of one of the rectangles. Carefully roll the dough up into a spiral log. Use the parchment paper to help support the dough as you are rolling up the dough. Repeat until all the rectangles are rolled up
If making pizza rolls cut the spiral logs into small spirals about 1 inch thick. If making pizza pockets lightly moisten finger tips. Press together the edges .Lightly rub finger tips over the seams on the sides and on the bottom of the pockets
Lightly spray the bottom of air fryer basket. Lightly brush each roll or pocket with oil. Place roll or pockets in a single layer in air fryer basket. Air fry at 400 degrees for 3 minutes. Turn and air fry another 1-2 minutes or until lightly brown all the way around. Serve immediately with extra pizza sauce
