Ingredients
192gramsgranulated monkfruit sweetener or granulated sweetener of choice (1 cup)more or less
1tspvanilla extract (optional)
264gramspeanut butter (1 cup)nut free: use seed butter or coconut butter + peanut flavoring
1largeegg, room temperature
2 TBS cocoa powder for chocolate version only
Instructions
Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Set aside
In a large mixing bowl combine all ingredients. Stir until a smooth dough like texture is formed
Scoop dough out 1 TBS at a time onto prepared baking sheet about 2 inches apart
Roll each scoop into a smooth ball. Flatten and shape each cookie into desired shape and thickness. Bake at 350 for 12 minutes or until golden
Remove from the oven. Allow to cool on pan about 15 minutes or until firm. Transfer to a wire rack. Allow to cool completely before frosting (if desired) Sore leftovers in airtight container in the refrigerator up to 1 week
