Preheat oven to 400 degrees. Line a 9x5 inch loaf pan with parchment paper. Allow paper to hang over the sides for easy removal. Set aside
In a small bowl stir together the topping ingredients until fully combined then set aside
Sift the dry bread ingredients into a large mixing bowl until there are no lumps
Stir in the eggs until fully combined. Stir in the oil until combined and a smooth dough has formed
Gradually fold in 1/2 cup of the shredded mozzarella until fully combined
Divide dough into 2 equal portions. Press 1 portion evenly throughout the prepared loaf pan
Sprinkle remaining 1/2cup of shredded mozzarella over dough in pan. You can use more or less of the cheese depending on how cheesy you want the center of your bread Spread and press remaining dough half over the mozzarella cheese
Sprinkle the prepared cheese topping evenly over the dough. Place in preheated oven. Bake at 400 degrees 25 to 30 minutes or until cheese is brown
Remove from oven. Allow to cool in pan 20 to 30 minutes or until firm
.Grasp overhanging paper and gently transfer bread to a wire rack
Let sit a couple of minutes to make sure the ingredients are settled. Cut into 1/2inch slices. Serve warm or allow to cool completely
Allow leftovers to cool completely. Store in an airtight container at room temperature up to 3 days or in the refrigerator up to 1 week
