Low Carb Sugar Free Berry Cobbler

This recipe is designed to teach anyone how to make quick and easy low carb sugar free blackberry cobbler

Ingredients

  • 4 cups blackberries or berry of choice
  • 1 TBS lemon juice
  • 1 large egg
  • 1 cup granulated stevia or sweetener of choice
  • 2/3 cup almond flour or gluten free flour of choice
  • 1/3 cup vital wheat gluten see notes for gluten free
  • 6 TBS butter, melted

Sugar Free Whipping Cream

  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1/4 cup powdered erythritol, or powdered sweetener of choice see notes on how to make your own powdered sweetener

Instructions

  • Preheat oven to 375 degrees. Spray an 8X8 baking dish with cooking spray
  • Place berries into prepared baking dish. Add lemon juice and gently stir to coat the berries
  • In a medium mixing bowl stir together egg, stevia, vital wheat gluten, and almond flour until fully combined. Mixture will resemble meal
  • Sprinkle flour mixture over the fruit in the baking dish. Drizzle melted butter over the flour and berry mixture
  • Bake for 30 minutes or until lightly golden and bubbly. Let stand in the pan at least 10 minutes
  • Serve warm and with whipped cream if desired. Let leftovers cool completely and store in an airtight container in the refrigerator

FOR SUGAR FREE WHIPPING CREAM

  • In a large mixer bowl combine all ingredients. Switch to whisk attachment on standing mixer. Whisk on high for 4-5 minutes or until cream is stiff enough to stand on it's own

Notes

FOR GLUTEN FREE: substitute vital wheat gluten with 1/3 c almond flour and 1/2 tsp xanthan gum
FOR POWDERED SUGAR: in a small food processor combine 1/4 c granulated stevia or sweetener of choice and 1/4 tso cornstarch. Process for about 10-15 seconds or until the texture is powdery.
