Ingredients
150 gramscoconut flour (1 1/4 cup)
15gramsbaking powder (1 TBS)
25gramsbrown sugar sweetener of choice (2 TBS) adjust to tasteI use brown monkfruit sweetener
1/4tspsalt
1gramxanthan gum or psyllium husk powder (1/4 tsp)
dry spices of choice, optional
3largeroom temperature eggs
54gramsoil of choice (1/4 cup)
240gramsroom temperature plain yogurt or sour cream (1 cup)
160gramsketo syrup of choice (1/2 cup)I use Choczero maple syrup
3gramsmolasses or maple extract (1/2 tsp) adjust to taste
Instructions
Preheat oven to 350 degrees. Line an 8 x 4 inch loaf pan with parchment paper. Allow paper to hang over the sides for easy removal. For buns preheat oven to 400 degrees and lightly grease 3 to 4 inch wide silicone burger bun molds
Sift dry ingredients into a large mixing bowl until fully combined and no lumps. Stir in the eggs until all the dry ingredients are moist. Stir in the remaining ingredients until fully combined and a smooth dough has formed
Scrape down the sides of the bowl and press dough to the center of the bowl. Form dough into a smooth ball and massage for 1 minute to make sure of the texture. Dough should be lightly moist and hold together well
Place dough into prepared loaf pan and press the dough evenly throughout the pan. Bake at 350 degrees for 40-45 minutes or until golden and a tester comes out clean For buns press dough 1/4 cup at a time into prepared molds and bake 400 degrees 15 to 20 minutes until a tester comes out clean
Remove baked bread from oven and allow to cool in the pan or molds at least 30 minutes or until firm. Once firm grasp overhanging paper and lift bread out of pan. For buns carefully remove from molds. Transfer to a wire rack and allow to cool completely before slicing
Once cool slice desired size slice, eat immediately. Store leftovers in an airtight container at room temperature up to 3 days or freeze up to 3 months
