Preheat oven to 400 degrees. Line 2 large baking sheets with parchment paper
In a large mixing bowl combine almond flour, oat flour, vital wheat gluten, stevia, baking powder, cinnamon, nutmeg, ginger and salt
Whisk together until fully combined and no lumps left in the flour.
Add pumpkin puree, maple, egg, and oil. Stir with a wooden spoon until fully combined and no dry ingredients are left in the bowl. Let batter sit for 3 minutes
Scoop batter out 1 TBS at a time onto prepared baking sheets. Bake 10-12 minutes or until golden
Let cookies cool on the pan for at least 5 minutes then transfer to a wire rack to cool
