Ingredients
1TBSolive oil
2 1/2cupschopped mixed vegetables of choice, adjust to desired amountI used jicama, celery, carrots and red onion
29ozbeef broth (3 1/2 cups), adjust to desired amount
14.5ozcanned diced tomatoes, undrained
1lbchopped steak, cooked
1 1/2TBSdry seasonings of choiceI used thyme, oregano, basil, onion powder and garlic powder
salt and pepper to taste
Instructions
Place oil in a 5-quart saucepan over medium heat. Preheat the oil over medium heat 3 to 5 minutes or until warm. Add the vegetables and cook stirring occasionally 3 to 5 minutes or until softened
Add the remaining ingredients and stir to combine. Bring to a low boil. Cover, reduce heat to low and simmer at least 20 minutes or until the vegetables are tender.
Ladle desired amount in serving bowl. Serve warm. For leftovers, cool them completely and store in an airtight container in the refrigerator up to 3 days
