Ingredients
4ozpork rinds, crushed into crumbs the finer the crumbs the better they stick to the chicken
11gramsfreshly grated parmesan cheese (2 TBS)
2TBSdry Italian seasonings
salt and pepper to taste
1largeegg
69gramsmayonnaise (1/3 cup)
1 lbboneless chicken thighs (about 4 thighs)
4keto hamburger buns
sauce, cheese and toppings of choice
Instructions
Preheat oven to 425 degrees. Spray an oven fryer rack with cooking spray. If you do not have a oven fryer rack line a large baking sheet with foil. Place a cooling rack on top of the foil and spray the cooling rack (see video if needed) Set aside
Place the crushed pork rinds in a large Ziploc bag. Add the parmesan cheese, Italian seasonings, salt and pepper. Shake the bag until fully combined. Set aside
Combine the egg and mayonnaise in a wide bowl and use a fork to stir until fully combined. Place 1/4 of the pork rind mixture into a separate wide bowl. Do not put all the mixture in at once. You will add more as needed
Place one thigh into the mayonnaise mixture and turn to fully coat the thigh. Place the coated thigh into the pork rind mixture and turn until the thigh is fully coated. Press the pork rinds into the mayonnaise as you turn to coat the chicken.
Place the fully coated chicken onto the prepared oven fryer rack or cooling rack. Pour another 1/4 of the pork rind mixture in the bowl and repeat the coating process until all the thighs are fully coated.
Once the thighs are on the rack keep space between each thigh. Lightly spray the top of the thighs with cooking spray. Place in the preheated oven. Bake at 425 degrees 40 to 45 minutes until crispy and the internal temperature is at least 165 degrees.
Remove from the oven and allow to cool on the rack 3 to 5 minutes so do not burn fingers. Place the sauce of choice on the keto bun of choice. Top with one chicken thigh. Top the thigh with cheese and topping of choice. Serve warm
